The great folks at Oaklyn Plantation in South Carolina
report a new state of the art air chilling system for
chickens that exceeds previous specs. 98% of
poultry in the USA is chilled in a common ice water
bath with the birds absorbing water in the
process. Air chilling is a much cleaner process and
you, Mr. or Mrs. customer are not buying water at
the point
of purchase.
Oaklyn offers a list of 20 pound bundles
on the lower part of the poultry page. You can
select from 3, 4 and 5 pound whole chicken bundles. A
combination of whole chickens and feet has been
very popular with the
Weston A. Price Newsletter audience. The boneless breasts and parts combo is
becoming a very fast seller. Or, purchase 20 pound
boxes of breasts, thighs, drumsticks, wings or backs. Last but not least, the whole chicken and parts combo is
ready
for your barbecue grill.
Oaklyn also reports the implementation of CO2
stunning. Owner David White reports this system is a
much
more humane method of subduing the birds
eliminating damage to chickens and workers in the
process.
We apologize for the rapid disappearance of goat
cheese. Only two choices remain in scant
quantities.
