We have experienced the true meaning of April monsoons this week in the Midwest. as Mother Nature unloaded copious amounts of rain and tornadoes in our sector of grazing country.

With the 2007/2008 school year winding down, we suggest parents lobby school administrators and boards coast to coast to make informed protein decisions for the 2008/2009 year and beyond. One school district in Colorado Springs, has made the decision that buying surplus beef from USDA is not in the best interest of our next generation of decision makers.

    Dear Pat,

    Hormone free milk . . . wow, tricky, tricky. The industry is always trying to make some money the easy way, this one doesn't mean it is organic, is just means that the cows they used are in a building eating grain and chemicals but are not getting hormones, and I hate them for that; however, it is marketing.

    Grass fed hormone free milk means that the cows are eating grass and grazing like they are supposed to be and not in "prison", they are healthier and have better distribution of fats and proteins than the above.

    IT ALSO MEANS THAT CHEMICALS, TOXINS ARE NOT FED TO THE ANIMAL, AND BY THE SAME TOKEN YOU ARE NOT CONSUMING ALL OF THE ABOVE.

    Shrimp Cooked

    The Science of Shrimp

    Why does shrimp turn from gray to pink when cooked? The answer lies in astaxanthin, which is a carotenoid (a carotene-like pigment). Astaxanthin is responsible for the pink to reddish color of other fish and crustaceans, such as salmon and crayfish. In shrimp, the astaxanthin is bound to a protein, which masks the pink color while shrimp are raw. When exposed to heat, a chemical reaction breaks the bond between protein and pigment, unmasking the pink color.

    The potential health benefits of astaxanthin are even more impressive than its color producing ability. Astaxanthin is a powerful antioxidant, boasting 10 times the antioxidant power of most carotenoids. Unlike other carotenoids, it does not convert into Vitamin A (retinol) in the human body; excessive Vitamin A is toxic to humans.

    In the human body, astaxanthin's antioxidant power may help prevent cardiovascular, immune, inflammatory and neurodegenerative diseases. Because it is able to cross the blood-brain barrier, it may also help to prevent oxidative stress and diseases of the eye, brain, and central nervous system.

    Rock Salt Shrimp

    Ingredients:
    4 pounds rock salt
    1 pound large shrimp (21 to 25 per pound), with heads on

    Directions:
    Divide salt evenly among two (9 x 13-inch) metal pans. Heat oven to 400 degrees F and place the pans of salt into the oven. When the oven reaches 400 degrees, allow the salt to continue heating for 15 minutes. After 15 minutes have passed, remove pans from oven. Place the shrimp on top of the salt in one pan. Cover shrimp with all of the salt in the second pan. The shrimp should be evenly and completely covered. Return to oven and roast for 8 minutes. Remove from oven and check shrimp for doneness. The shrimp should be opaque. If not done, return to oven for 1 to 2 minutes.

    Serve immediately.
