Dear Dr. Serrano:
Help!
I suppose I now understand what yo-yo dieting
is. I am a 36 year old mother of 2, am 5'9
and weigh 150 lbs (I feel this is too much
for me). All my blood work is normal except
that I keep testing positive with high
billiruibin levels (possibly Gilberts
syndrome- a benign liver condition). Also,
allergy tests positive for eggs & dairy (for
which I have no reaction, and does not change
when I eliminate them - I probably outgrew the
allergy).
My diet consists of mostly grass
fed beef,
some hormone
free chicken, some fish,
mostly
organic fruits & veggies, eggs, minimal
dairy,
organic coconut oil, no trans fat or
hydrogenated oils - and I try not to eat
sugar or white flour or too many grains on a
regular basis. I exercise moderately
(walking 3-4 miles 3 - 5 times per week) and
work out with weights occasionally; however,
this has not helped me maintain my weight. I
got down to 136 where I felt great as I am
small/med boned for my height. In the last 2
months I decided that I am burned out on
dieting (have been on a low calorie diet for
the last 1.5 years), and while keeping to my
healthy diet as listed above, went back to
normal calories (no more than 1500). I
gained 15 lbs in 6 weeks, eating no flour or
sugar!
Yesterday I started South Beach per the
recommendation of my nutritionists, and my
husband lost .5 lbs, and I gained 1 whole
pound! I do not feel so great on this diet,
and am more confused than ever!
I do not for the life of me know how to lose
weight and keep it off since sensible eating
& exercise do not seem to work. Is there
something wrong with me, something I am
missing, or something you can help me
with?

Dear B:
Your testing with high bilirubin and the
Gilbert's Syndrome is usually resolved with
high vitamin concentrates with riboflavin and
niacin, but you must check with a test called
Spectra Cell, and it will give you the
answer. About your allergies and outgrowing
them - how did you do that? Did you come up
with that conclusion, or you don't feel
anything any more? You
don't have to feel a thing externally, but it
will affect your body, so you must be
careful
about how you came up with that conclusion -
and how did you get tested, with blood or
skin?
You also said you have been eating well, but
later you stated you have been in a low
caloric diet for 1.5 years, which is not good
for females. Even tough you stated again you
went to 1500 calories, which again is too low
for a woman your size and with your workout
history. B, you will never lose weight
because you are in starvation mode due to
your severe limiting of calories. Sorry, you
must completely come off your diet, and start
eating healthy, using the proper testing for
your allergies to really find out what you
are allergic to, and also add good fats to
your diet, and again you are not going to
lose weight if you don't go off and start
from scratch.
I don't know what diet you are using now, but
I am assuming the South Beach Diet, and again
you are
going to gain weight because of the
starvation you have put your body through, so
make sure you increase your caloric intake
with good organic food. Keep your intake of
grains and fruits low, but not the caloric
intake and you will see a difference, with
your height and your body habitus and your
workouts you must at least consume 2800
calories.
B, my advice is to start cycling calories
until your body gets out of the starvation
mode. To do that, eat low
caloric for two days and then go high for two
days and then low again for two. Do that for
two weeks then switch to low caloric days to
one, and two high, then one low, then 2 high,
until you are in your baseline, which is
about 2800 calories, when eating your low
caloric days and that will take about 3
months.
You must also lift weights, which is better
than aerobics because it keeps your muscle up
and prevents starvation mode.

Salt Encrusted Beef Roast
Ingredients:
3 cups coarse salt (sea salt or kosher salt)
3/4 cup water
One standing
rib roast or heart
of shoulder roast
Optional: fresh herbs and garlic, to taste
Directions:
- In a bowl stir together the salt and 3/4
cup water until the mixture forms a slightly
stiff paste resembling wet snow.
- Arrange the roast, fat side up, in a
roasting pan. Spread herbs and/or garlic over
roast, if using, before coating the roast
completely with the salt mixture, patting the
mixture on about 1/4 inch thick.
Roast the beef in the middle of a preheated
oven 325°F. oven for 2 to 2 1/2 hours (about 22
minutes per pound), or until it registers
130°F. on a meat thermometer for medium-rare
meat.
- Transfer the beef to a cutting board and
let it stand for 15 minutes. Remove the crust
with a hammer and carve the meat.
