Happy Fourth of July from US Wellness Meats!
On this special holiday weekend we salute our servicemen and women serving overseas and their families at home. We also remember the heroes who have paid the ultimate price for the freedoms we are celebrating this Independence Day. We cannot thank them enough for their services and for protecting the independence we received back in 1776 after 55 men and 1 women signed the Declaration of Independence knowing full well it was a death sentence if caught by the British.

For those of you who have been following HR 2749, the Food Safety Enhancement Act, you probably know that it has passed the House by 1 vote and is now under debate in the Senate. This scary legislation is trying to make a one-size-fits-all type of regulatory system for large industrial farms and corporations and small family farms and farmers markets alike. With companies like Monsanto strongly pushing the bill, it is not hard to see what end of the spectrum will benefit from it. We have voiced our opinions to local representatives and suggest you do the same in order to protect our family farms and small scale farmers. Dear Dr. Serrano,
Do you have a natural treatment for Grave's disease? I am a 50-year-old female. My TSH is .003; thyroxine, free (FT4) is 2.18; T3, free is 5.1; anti-thyroglobulin is <20. I live in Canada, but will be staying in the US for a journalism assignment for the next 4 months. My only symptom is a racing heart. I am already eating brassica vegetables 2-3 times a day and have increased my soy intake as per the recommendation of the nutritionist in my MD's office in Canada.

Dear T.D.:
Graves is a thyroid problem that is hard to treat because it depends on the length and the cause and I don't know either of those answers. I would stop caffeine and any stimulants such as soda or decongestants. I would also stop eating soy because it affects your labs and your thyroid, and not in a good way.
Check your lead, mercury, antibodies and the rest of the hormones, not just the thyroid levels. In addition, find out what foods you are allergic to because they will also affect your thyroid, and start a good thyroid glandular from standard process or thorne.

Featured Recipe: Osso Buco
|
Osso Buco Recipe
Ingredients:
- 1 onion, chopped
- 1 clove garlic,
minced
- 275 mL white
wine
- 1 ½ cups
tomatoes, peeled and finely chopped
- 1 tbsp tomato
paste
- 4 tbsp grass-fed butter
- seasoning salt
- pepper
To Garnish:
- minced garlic
- chopped parsley
- 1 lemon skin, grated
DIRECTIONS:
-
In large skillet or Dutch Oven melt 2 tbsp
butter. -
In same skillet, brown onion and garlic for
approximately 10 minutes, then move to separate plate. -
Add rest of butter to skillet and brown lamb on
all sides. -
Add wine, let boil for a couple of moments, then
lower heat and add onion, garlic, tomatoes, tomato paste, salt and pepper. -
Cover, leave on low heat for 1 hour. -
Remove lid then cook for another 30 min so meat
becomes tender. -
Mix onion, parsley and grated lemon skin to
garnish the meat.
