We have made it through another busy month here at US Wellness Meats! September is a month we have been looking forward to for awhile, as we will be celebrating our 10-Year Anniversary! Speaking of winning, we wrapped up the Blue Ribbon Recipe Contest this week. Fair season is coming to a close here in Missouri, and fair food has been on our minds all summer! Pork Update: Due the pork shortage in the US, the price of raw pork products has continued to climb in the last year. Unfortunately, we have no choice but to also raise the price of our pork products. As of September 3, you will see an 8% increase in pork prices.

Dear Dr. Serrano,
No, I am not a vegetarian but I was recently reading a book by Dr. Fhurman called "Eat To Live".
In short he made mention that the China Project is the longest and most extensive study ever done. He says that meat added to one's diet causes cancer and chicken seems to be highly cancerous, even organic. Please help!

Dear Charles,
I only have one thing to say- you will have to move to China to make this book a reality show. The author took studies and research and twisted them. The oldest book in history is the bible and the people ate meat, this China book is actually annoying. In my office, I see some vegetarians and my wife sees a bunch and I can tell you 100% of them have a lot of problems. Now, if you want to be a vegetarian make sure you are a vegetarian and not a grainian (yes I made this word up, but I also made up the definition: a race that supposedly is vegetarian but in reality they eat grains all the time such as pasta, breads, cereals, rice, corn, and the occasional vegetable). You can eat low fat if you want to, and some people need to eat that way, but make sure you get the essential fatty acids and fats that you need for your brain, digestive system, heart, skin and nervous system. Sorry, the biggest study? How did he do it? How did he come to the conclusions and what kind of chicken and meat was consumed? Was it contaminated? Was it true chicken and was it organic?

Mustard-Garlic Grilled Beef Skewers
Ingredients: Garlic Mustard Glaze: - 4 cloves garlic, finely chopped
- 1/4 cup grainy mustard
- 2 tablespoon Dijon mustard
- 2 teaspoons Spanish paprika
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon low-sodium soy sauce*
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
*See our soy sauce substitute. Directions: - Whisk together all glaze ingredients in a small bowl. Cover and let sit at room temperature for 30 minutes before using.
- Heat grill to high. Skewer 2 pieces of the beef onto 2 skewers so that the meat lies flat.
- Brush the meat liberally on both sides with the Garlic-Mustard Glaze.
- Grill the meat for 2 to 3 minutes per side until golden brown and cooked to medium-rare doneness, brushing with the remaining glaze while grilling.
Remove from grill and serve.

US Wellness, Thanks for the information. I fed my dogs some of the partially thawed bison today and they were saying "hey we missed this stuff!" (I ran out almost a week ago and they are used to eating it about 3 times a week.) My 11-year-old dog really enjoyed the knuckle bone the day before he had some surgery. You should have seen him, and his teeth are a lot cleaner. He loved it. He got a real workout. I cannot get him interested in chews at all but both times I gave him one of your bones he never lost interest. I offered it to the younger dog but the older dog wanted it more.
