Dear John,
Happy Mother's Day! US Wellness sends its best wishes to all of the Mothers reading this weekend. We thank you for your critical contributions to this great land. Families are the back bone of civilization, and many mothers never receive the accolades they deserve for keeping a growing family on the straight and narrow path.
US Wellness genuinely appreciates your continued support and understanding of grass-fed meats and using grass-fed cuisine to keep your family healthy.
More benefits of eating a whole foods diet! A recent study by the University of Melbourne - Australia found that "A traditional or whole diet characterized by vegetables, fruit, whole
grains, and high-quality meat and fish may help prevent mental illness -
specifically, depression and anxiety."
This new research is very promising, and is just a reinforcement of what we already knew! This is just another reason why a traditional diet rich in nutrient-dense foods is good for you. The study compared subjects eating a "traditional or whole diet" to those eating a typical "Western diet". They found that those on the traditional diet had significantly less chances of suffering from depression and other anxiety disorders. The study made a very good point - one of the main ingredients in the traditional diet is meat. They stressed that in Australia most meat is grass-fed, compared to the US where most is grain-fed. It is very important to get your meats from grass-fed animals, which have significantly higher levels of omega-3's. Grain-fed animals typically have much higher levels of omega-6's, which could possibly lead to more mental health problems. Visit our Health page for more information about omega-3's and omega-6's and the difference in grass-fed.
Omega-3's and CLA are highly concentrated in the fat of grass-fed animals. An excellent way to add both to your diet is to try Pemmican. We call it 'super energy for athletes' because of the whopping 17 grams of protein and 320 calories in every bar. This is one of the healthiest nutrition bars on the market and a staple in many paleo diets. Pemmican has been around for centuries and ours is made from a traditional Native American recipe. Read excerpts from Lewis and Clark's journal HERE about "Pemitigon" and and how it originated.

"What is the only vegetable that is never sold frozen, canned, dried, or processed and only sold fresh?" Please email your answers to blog@grasslandbeef.com. Thanks to all who have been participating in our Trivia Contests! In the last news alert, we asked: What famous North American landmark is
constantly moving backwards? The answer was: Niagara Falls. The rim is worn down about 2.5 feet per year because of the millions of gallons of water that constantly rush over it. Best Mother's Day Wishes,
John, Lee Ann, Megan, Tressa, and Jennifer, on behalf of the farm families of U.S. Wellness Meats

Dr. Serrano,
Most recommendations for daily Omega 3 supplementation I have read are now suggesting 2-3 grams daily. If our family eats high omega 3 salmon twice monthly and eats grass-fed beef or buffalo (1/4 lb serving per person) 3-5 times per week, will this eliminate some of the need for supplementation, and if so, how much supplementation will I need?
Thank you! S.D. Texas

Dear S.D.,
First of all, congratulations on your healthy diet and your food choices. Although you have told me what your choices are for your protein intake, what about carbohydrates and other food intake?
I think that with your present intake of organic meats and fish you are safe to reduce your supplementation but I would still take fish oil supplements, due to the amount of research on fish oils and health.
Since I do not know what type of other foods or fats you are eating, I do not know what kinds of ratios you have with regard to Omega-3's and Omega-6's. The important thing here is to realize that even though you may be getting an adequate supply of your Omega-3 fats through the salmon and grass-fed beef, if you are also getting a lot of Omega-6's from vegetable oils and trans fatty acids, then it would be important to continue with a higher intake of Omega 3's. So supplementing Omega-3's will not harm you even if you are getting an adequate amount in your diet.
Take Care!

Steak Sandwich with Grilled Onions
Ingredients:
- 1/4 cup soy sauce*
- 1/4 cup balsamic vinegar
- 1 tbsp brown sugar
- 1 tsp fresh thyme leaves
- 1/4 tsp ground pepper
- 1 beef flank steak
- 1 medium red onion, thick slices
- 8 slices sourdough bread, toasted on grill if you like
- 2 medium ripe tomatoes, sliced
- 1 bunch arugula, tough stems discarded
Directions:
- In large self-sealing plastic bag, mix soy sauce, vinegar, sugar, thyme, and pepper. Add steak to marinade, turning to coat. Seal bag, pressing out excess air. Place bag on plate; let stand 15 minutes at room temperature or 1 hour in the refrigerator, turning over several times.
- Meanwhile, for easier handling, insert 1 long metal skewer horizontally through onion slices; set aside. Prepare charcoal fire or preheat gas grill for covered direct grilling over medium heat.
- Remove steak from marinade; pour marinade into 1-quart saucepan. Heat marinade over high heat to boiling; boil 2 minutes.
- Place steak and onion slices on hot grill rack. Cover grill and cook steak and onion 12 to 15 minutes or until onions are browned and tender and meat is medium-rare, brushing both with marinade occasionally and turning both over once. Transfer steak to cutting board; separate onion into rings.
- Thinly slice steak diagonally across the grain. Arrange onion rings and steak on 4 slices of bread; spoon any meat juices from board over onion and steak. Top with tomatoes, arugula, and remaining 4 slices of bread.

What Our Customers Are Saying
| John, Thank you so much for the order for the store! We are getting a regular base of customers now for the products. We have one customer who ordered the primal roast. He said it took 7 days to defrost in the refrigerator to cut into smaller portions. He said it is the best he has ever had and will get another one when it is gone. It was the most tender and flavorful meat for crock pot cooking.
Thank you for everything you do for us! The silver lining was a great addition in shipping. The meat wrapped in the silver lining was still perfectly frozen, and to add padding then the cheese on the top worked out perfectly. It was a visual masterpiece when I opened the lid. Thank you, R.H. San Louis Obispo, CA
