We have settled into summer here in Northeast Missouri, and after a winter of
blizzards and freezing temps we are loving the sunny days and warm weather!
US Wellness is now officially a cover model! We got our first issue of
Paleo
Magazine here at the office this week, and were happily surprised to see our
Skirt Steak right on the front cover. Our friends at the Primal Palate
submitted the recipe and took some amazing photos. The first issue is bursting with paleo information
by some of the best authors in the industry. We are proud to say that many of them have US Wellness

Speaking of paleo - it's finally here! We have been getting requests for a

We had a very busy Memorial Day week here at US Wellness. We were proud to be

Dear Dr. Serrano,
Thank you
for your gluten/celiac article. Please send me your protocol that you referenced in the final paragraph
of the article.
I am a 48 year old male and had digestive issues all my life until 1.5
years ago, when I stopped eating gluten, grains, starches, and sugar. I was not tested for celiac but
assume that I have the disease since my digestive symptoms vanished with my dietary changes. I only
consume
grass fed meats,
free range chicken and eggs,
no-nitrate pork, vegetables,
nuts, and some
berries. I
exercise regularly (competitive singles tennis, interval sprints, and weight lifting) and maintain a muscular
physique with single-digit body fat.
I am requesting your protocol because, despite my
overall good health, I suspect that I'm missing something because my dietary improvements have not helped
these issues at all, thus far: (1) my IGE has been consistently over 400 for at least 10 years; and, (2) I've
had a highly reactive skin allergic response all my life; and, (3) I have to take massive doses of calcium
(citrate) supplements, (7000mg/day when exercising in the Florida summer heat; less in other seasons) in
order to prevent terrible muscle cramps.
Other than the IGE, my current bloodwork is
pristine, including normal calcium levels. My wife is a chiropractor and discovered the calcium/cramps
connection after I suffered for many years, including near-emergency, whole-body cramping episodes. I
can consume this dosage of calcium supplements, without added magnesium, and have normal bowel movements with
no constipation; I believe this is because I do not absorb calcium normally; therefore I need the massive
dosage. Without high doses, I am unable to exercise or have a cramp-free night. If I supplement
the calcium with magnesium (or potassium), the calcium seems to be less effective for cramps, and I will
usually have diarrhea.
Regarding the elevated IGE, I have had regular skin eruptions for
at least the past 20 years that are not consistent with the look of a celiac rash. My skin "bumps"
appear with the look of individual "mosquito bites" that are not in clusters. A dermatologist's biopsy
of these bumps was negative, and following allergy testing, an immunologist diagnosed atopic dermatitis,
perhaps from tree pollen or molds. He recommended a course of allergy shots, stating there is some
evidence that the shots were effective with skin issues; however, I declined the shots, not wanting that in
my system. I have a feeling there is some type of intestinal connection to this skin issue.
Can you suggest any changes that I might try which would alleviate the elevated IGE, skin bumps,
and/or need for high-dose calcium? Thank you for any additional information that you have time to
provide!

I am sorry for the delayed response, but I have been traveling and by the way your wife sounds awesome
and we need to look at your symptoms a little deeper: When do you get the cramps? Only during workouts, and which kind? How
long do they last? Only in your legs? Is your belly included? What kind of drinks do you consume? carbonated
water? In addition, your skin condition is related to not consuming enough GLA in your diet and not enough of
certain fats. Ask your wife to call Scott at (614) 596-7994 and start taking 6 Alpha Omegas per day for
20 days and after that only 4 per day - that will help you with your skin. About your diet, and the IGE, you
still have not done the correct allergy test, and again you will have to ask your wife for help. Ask
her to order the Immunolab test from Florida and that will help you with your food allergies and maybe some
of the IGE problems. How much reflux do you have? Have you checked iron, thryoid, B12, selenium, boron, vitamin D, PTH,
RBC magnesium and ionized calcium levels? Before I continue doing the high dosages I would check all those labs
and make sure they are ok. I can't give you my protocol for gluten because when I create diets I look at events,
conditions, age, race, sex, genetics, area, stresses, supplementation and blood work before I start making
recommendations. I do know you have a digestive issue but again not enough details, I hope this helps in your
quest. Good Luck,

Garlic Lime Bacon-Wrapped Shrimp
Ingredients:
- 1/2 cup coconut oil
- 1/4 tablespoon lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
- 10 cooked medium
shrimp, shelled and deveined
- 5 slices
bacon, cut in half
- 4 oz can whole green chili peppers, drained, and sliced
lengthwise
- 1 avocado - peeled, pitted and
diced (optional)
- 1 lime, cut into wedges
(optional)
Directions:
- Whisk together the oil, lime juice, garlic, salt, and pepper in a mixing bowl. Toss the
shrimp in the marinade, then refrigerate for 30 minutes to 1
hour.
- Preheat an indoor electric grill for medium-high heat.
- Remove the
shrimp from the marinade, and shake off
excess.
- Wrap each
shrimp with a strip of chili pepper, then half a
bacon slice. Secure with a toothpick. Repeat with remaining
shrimp.
- Cook on preheated grill until the
bacon is crisp, and the shrimp is hot, 6 to 10 minutes. Sprinkle
the shrimp with diced avocado, and garnish with lime wedges to serve.
