Dear John,
We hope everyone's new year is off to a great start! We rang in 2014 here in Northeast Missouri with a snowstorm and record-low temperatures over the last week. We are enjoying much warmer weather this weekend and are hoping the cold weather is behind us! If eating healthier is one of your New Year's resolutions, we are here to help this week. The very popular Flank Steak is currently on sale - something that doesn't happen very often! This lean cut comes from the Short Plate area and takes very well to marinades. It is easy to cook - just a quick sear on both sides and slice against the grain and dinner is ready! They are also ideal for making fajitas, tacos and stir fry - like the Teriyaki Beef Stir Fry recipe in our recipe section below. Also on sale is the deliciously spicy Bison Chorizo - an excellent addition to any chili, breakfast casserole or pasta dish and our new Wild-Caught Maine Lobster, which is the best lobster we've ever had, hands down. Finally, if you are looking for a new healthy snack, lunchbox treat, or afternoon pick-me-up - the Peanut Butter Chocolate Bars are also on sale and are gluten/grain/soy/dairy-free! One of the keys to healthy weight loss is high metabolism. There are many ways we can boost our metabolism rates, and this quick slideshow offers some great ways to do that. Building muscle, drinking more water, eating plenty of protein, spicing up your meals and avoiding crash diets are all easy ways to give your metabolism a natural boost. For some great ways to get your new year off to its best start, check us out on Pinterest. We have recipe boards for every different type of meat, as well as boards dedicated to the best cookbooks, giveaways, nutrition, and bacon. Also, be sure to stay tuned to the blog and Facebook for upcoming giveaways! Happy New Year,

Just 1 in 4 Young Teens Meet US Fitness Guidelines
CHICAGO (AP) - Young teens aren't exactly embracing the government's Let's Move mantra, the latest fitness data suggest. Only 1 in 4 U.S. kids aged 12 to 15 meet the recommendations - an hour or more of moderate to vigorous activity every day. The results are based on about 800 kids who self-reported their activity levels and had physical exams as part of the 2012 National Youth Fitness Survey. Government researchers won't call the results disappointing, but lead author Tala Fakhouri of the Centers for Disease Control and Prevention said, "There's always room for improvement." The CDC released partial results Wednesday from the fitness survey, which involved kids aged 3 to 15. Other results from the same survey are pending and include fitness data based on more objective measures including treadmill tests. Fakhouri said the nationally representative results provide useful information for initiatives that aim to increase kids' fitness, including the Let's Move anti-obesity campaign launched by first lady Michelle Obama in 2010. Kids in the survey reported on which physical activities they did most frequently outside of school gym class - basketball for boys and running for girls. While few met guidelines established in 2008 for activity that raises the heart rate and makes you breathe harder, most said they did at least an hour of exercise at that level during the previous week. Overall, about 25 percent said they got an hour of that kind of exercise every day Obese kids were less active than normal-weight girls and boys. Overweight girls were slightly less active than normal-weight girls, but levels were similar among overweight and normal-weight boys. "It's definitely very concerning to see that our kids are engaging in such a limited amount of physical activity each day when we are still battling" an obesity epidemic, said Dr. Stephen Pont, an Austin, Texas, pediatrician and chairman of the American Academy of Pediatrics' section on obesity. Data suggest obesity may have decreased slightly among some kids but the overall rate for children aged 2 to 19 is 17 percent, or about 12.5 million obese kids. Pont said schools can do more to help by not cutting recess and giving kids more time for physical activity. He said research suggests kids who get physical education at school may do better academically. Recent national data on kids' fitness levels is limited. A 2009-10 CDC survey involving kids ages 6 to 11 found about 70 percent met the physical activity guidelines, although levels dropped off among older kids in that age group. The results came from parents, who may be inclined to over-report how active their kids are because of "social desirability," the researchers said.

Article Headline | Dear Dr. Kim, In your opinion, what alternative medicine therapies work best to combat stress? Much Thanks,Renee T.Bedford, NH__________________________
Dear Renee, One of my favorite alternative medicine therapies is yoga for combating stress. It is truly relaxing and gives you your own time. The other is truly talking to a psychologist who can assist in what your triggers are. There is nothing wrong with talking to someone about your issues, especially if they are causing significant issues in your life. I always try to address the problem at hand and if what I am doing currently doesn't equate to a solution I have to take a step back and see what is out there in terms of help. I use the following with patients: Yoga, psychologist, acupuncture, and working out. I would say with the majority, the stress is self-induced so it is great to talk to someone about these issues. Good Luck, Dr. Michael Kim _________________________________

Teriyaki Beef Stir Fry
Ingredients:
- 2 tablespoon coconut oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1/2 cup coconut aminos or gluten free soy sauce
- 3 tablespoons honey
- 1 tablespoon Steve's Paleo Chef Sriracha
- 1 teaspoon sesame oil
- 1/2 teaspoon fish sauce
- 2 tablespoons arrowroot powder, divided
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1/2 yellow onion, thinly sliced
- 1 cup sliced button mushrooms
- 1 pound flank steak, thinly sliced against the grain
- salt and pepper, to taste
- chopped green onions, to garnish
Directions:
- Place a large pan or wok over medium heat. Add coconut oil along with minced garlic and grated ginger.
- When garlic becomes fragrant, turn heat on low then add coconut aminos. Be sure that the pan has cooled down a bit before to keep the coconut aminos from splattering everywhere.
- Once coconut aminos have been added, increase heat to medium-low and add honey, sriracha, sesame oil and fish sauce.
- Bring sauce to a slow boil, then add 1 tablespoon of arrowroot powder, 1 teaspoon at a time and whisking to incorporate into the sauce. Meaning you will add 3 teaspoons total, whisking each teaspoon in at a time.
- Once sauce has become think, add peppers, onion and sliced mushrooms to the sauce and coat in sauce. Let cook down for about 6-8 minutes or until onion is soft.
- After the vegetables have cooked through, use a slotted spoon to remove the vegetable and set aside in a bowl.
- Increase heat to medium-high temperature and add thinly sliced flank steak to the pan. Cook steak on both sides for 2-3 minutes, until barely any pink remains.
- Add vegetables back into the pan and incorporate with the meat.
- Since the meat will render some liquid, add the remaining tablespoons arrowroot powder into the mixture, teaspoon at a time, whisking the powder in with the mixture.
- Top stir fry off with chopped green onions.
