Here are some of the wonderful team members at USWM busy in the Pick & Pack room restocking inventory and filling your 75% lean ground beef orders which are on sale until Saturday. This group has been in full operation for a several months and our ability to service you our customer has greatly improved. We are so excited to have them here with us in a single location.
Several months ago we shared a feature article from one of our long time friends Kat James and apparently you really liked what she had to say. So Kat is back with this week's health article which includes the story of her personal health transformation. In her pursuit of healthier life, she stumbled upon the almost "unbelievable" benefits of a high fat diet and eventually discovered the hormonal basis of why it works. This article discusses in much greater depth the effects of flipping into "leptin sensitivity."
Following her amazing personal transformation, Kat began sharing her wisdom with others and has now helped thousands to achieve similar success through her Total Transformation programs. Learn more about her next program, Cliff-side Total Transformation which is being held in Hot Springs, NC, March 21-26.
REMINDER ...... Noon CST this Friday, February 12th is the deadline for Fresh Chilled Beef orders. Not sure what we are talking about, visit our Fresh Chilled Beef FAQ page to see what you are missing.

| Leptin Hormone -- Effects Upon the Body

Source: Kat James Ready or not, the science is in: The largest dietary studies in history, such as Stanford's A to Z study and the Swedish Council on Health and Technology Assessment review of 16,000 dietary studies, have clearly shown that low-carb diets reign supreme for both weight loss and health. Sweden has declared "LCHF" (Low Carb High Fat) as their official diet. Norway followed. The USDA won't "go there" yet, but they did strike cholesterol from their list of things to avoid for the first time since 1980. Ivy league cardiologists are admitting being wrong for forty years. Time magazine put a pat of butter on the cover last year and reported that fat-phobia (in both culture and the medical world) was based on... um... flawed science.

"Treat Meat!"
"These seem to be generously cut 6-oz steaks, and ours were perfect cuts of filet...no gristle, nothing but beautiful, tender meat. We grilled ours over charcoal and were careful not to overcook. Definitely a treat." M.J. C.

Author: The Phoenix Helix (Paleo, AIP, Wahls)
Ingredients:
Herb Burgers:
Italian Spice Burgers - 1 lb. ground beef/ ground bison
- 1/2 tsp. sea salt
- 1/2 tsp. dried oregano
- 1/2 tsp. dried minced garlic
- 1/4 tsp. dried basil
- If you have a kitchenaid mixer, you can use it at low speed, to blend the spices into the meat. Otherwise, put all of the ingredients in a large bowl and blend with your hands.
- Shape into 3 or 4 patties, depending on how big you like your burgers. (This recipe also doubles very easily.) If you have time to let them sit for 30 minutes before cooking, they'll be even more flavorful.
- You can cook these in a skillet over medium heat (5-8 minutes per side), or on a gas grill over medium heat (3-5 minutes per side). If you cook them on the grill, just be sure to preheat your grill, and poke a small hole in the center of each patty to ensure they cook evenly (no raw centers).
** On a healing diet, I cook a LOT of burgers, so to keep from getting bored, I like to mix up the flavors a bit. Mickey at Autoimmune-Paleo gave me the idea with her herb burgers. The herb version below is a variation on hers, using dried spices instead of fresh (sadly, I have no herb garden). She eats her burgers for breakfast, but they're delicious any time of day. In my Paleo Road Trip article, I mentioned that I also pack these for the road, because they taste great cold and make a filling course for your roadside picnic. You can also freeze the patties to cook later! __________________________________________________
Thanks to Eileen Laird of The Phoenix Helix for this recipe. Eileen was diagnosed with Rheumatoid Arthritis in 2012, and is now 95% symptom free. She does not claim to be a doctor or dietitian, but is just one woman among many, for whom diet has become medicine. Through her blog, she hopes to share her journey, connect with others, and create a resource of information & inspiration for anyone with autoimmune disease, who wants to tap their own healing potential. She is also the Autoimmune Columnist for Paleo Magazine, host of the Phoenix Helix podcast, and author of the e-books Reintroducing Foods on the Paleo AIP and 85 Amazing AIP Breakfasts.
