Classic Cuts Anyone who loves a good steak will generally have a favorite cut. Sometimes there's one for the grill, one for the restaurant, and one for the skillet. Favorites sometimes change, but if you stick with a 100% grass-fed steak, you will be sure to get a nutritious and delicious cut of beef. Our expert meat cutters have several decades worth of experience with sharp objects. When cattle are harvested, we receive the meat into our facility in large primal size portions (Round, Loin, Rib, Chuck, Brisket, Shank, Flank and Plate) and sub-primals. We make some of these primals available in our store as well, for customers who want to cut their own. Most of these primals are divided into smaller portions though. There is a reason why some cuts are a little pricier. There are only so many pieces of each cut that can be harvested from an animal. There is only one Heart and one Tongue for example, which is why it's more difficult to keep these in stock. US Wellness is a nose to tail supplier, so we use the majority of the animal, including Organ Meats, Marrow Bones, Oxtail, etc. Burger can be ground from several parts, but a Ribeye only comes from the rib primal and it's in limited quantity. The Filet Mignon comes from the tenderloin and there are only two of these per animal. We might get 10 steaks per tenderloin depending on the size. Filet Mignon is the most tender steak cut and will literally melt in your mouth. It is highly sought after and for good reason...it's crazy good! Another amazing steak is the Delmonico which is a classic cut made popular by Delmonico's Restaurant in NYC which opened back in the early 1800's. Our Delmonico's are cut from the short loin for a tender treat. You'll also find classics like the Top Sirloin, NY Strip, T-Bones, Shoulder Tenders (Teres Major), and numerous others. All of these make excellent choices for the grill, skillet or when ordering at your favorite restaurant.
