Heart disease or Cardiovascular disease is the leading cause of death in the U.S. The cardiovascular system — the heart being the key component — is responsible for moving blood throughout the body to it's various parts. 'Cardio' refers to the heart muscle while 'vascular' refers to the system of blood vessels. The body's circulatory system is vital to our overall health for obvious reasons. When it gets clogged up, bad things happen.
The foods we eat can benefit or diminish our circulation. Cheap vegetable oils began as a waste product but were eventually marketed and sold as a cooking oil to replace animal fats like lard, tallow, and butter. A concerted effort was made to disparage animal fats while vegetable oils were heralded as a wonderful new alternative. Some ads even said you could eat foods fried in vegetable shortening '7 days a week' with no health concerns. This all started in earnest back in the early 1900's. By 1916, one of the original factory made oils was celebrating sales of 60 million pounds.
It wasn't until nearly 80 years later that we'd know how much ultra processed vegetable oils had effected the health of Americans. Today, about 1 in 4 American deaths are the result of heart disease. While many still use vegetable oils for cooking, and they're found in nearly every processed food item and fast food, many are returning to animal fats for the health benefits and flavor. Every year brings new studies confirming the nutrient value of animal fats, particularly from grass-fed and pasture-raised, and wild-caught cold-water fish like salmon, mackerel, sardines, etc.

"I started cooking at the age of 8. I would go to the library and check out cookbooks for kids and my grandmother would help me navigate the recipes and measure items. We would always look for ways to put our signature on the recipe by adding or changing items. My grandmother was an older southern woman and she didn’t even understand the concept of a recipe, she had the very old school mentality of “just add how much you need” ..LOL… can you imagine?
