Father's Day is just around the corner and Dad is ready to tackle grilling duties. He's relishing this "chore". Grass-fed and pasture-raised meats typically have a richer flavor than their corn-fed cousins, along with considerably more nutritional value. We'd also encourage you to try other not-so-common cuts. Organ meats are generally considered to be superfoods due to the wide range of vitamins, minerals, and healthy fats they contain. Animals raised naturally take more time to bring to market, as well as considerably more land and labor to tend, which means their going to be somewhat more costly. Have you ever wondered why some cuts are more expensive than others though? Much of the reason has to do with supply and demand, but it's also due to the amount of work that goes into cutting and preparing steaks. Ground meats come from all over the animal so it's more more plentiful. Other cuts might be greatly limited in quantity like steaks, tongue, cheeks, sweetbreads, kidneys, heart, liver, etc. Steaks and chops are sought after by today's meat eaters, and rightly so, but our ancestors prized the organ meats. They inherently knew the most nutritious parts of the animal were organs and this knowledge was extremely important to their survival. Stronger, healthier hunters would be better equipped physically and mentally to have successful hunts. Enjoy the steaks and chops this summer, but when they're available, try to include some organ meats too. It's a great way to provide a boost for your health and wellness.
