Have you ever been to a traditional lūʻau? It is a memory you won't soon forget. It's basically a huge outdoor party that features dancing and lots of food. The tradition has been passed down for generations in Hawaii. One of the key ingredients to a festive lūʻau is a roasted pig. Kalua is the method used for cooking a whole pig in the ground. The pit must be big enough to accommodate a whole pig. This can vary depending on the size of the animal, but it's going to be a pretty good size hole in the ground. The underground oven is prepared using hardwoods to get things hot. Rocks are collected and spread over the coals so they distribute heat more evenly. Part of a banana tree trunk is often used in the pit to provide steam that helps cook the pig. Whole cabbages can be used as well since they hold a lot of moisture. There's a lot that goes into preparing a traditional kalua pig roast, but if you've experienced this, you know it's worth it. The result is an intoxicating sensory overload of savory aromas and flavors. It's a feast for all of the senses. Nowadays, it's much easier to roast a whole pig and we have suckling pigs that are much smaller than a whole hog. All you need is a grill or smoker with the proper dimensions and you're well on your way to preparing this masterpiece. You'll need at minimum a 36 inch grill to accommodate one of our whole roasting pigs.
