We've come a long way. History records knowledge of nutrition as it developed over thousands of years. Ancient Greeks believed in the power of food to heal. Greek philosophers and thinkers pondered the connection of food and health and decided the body has four "humors" which needed to stay in balance for health. These "humors" could be modified by changing diet. It wasn't until the early 1900's when modern science was able to isolate and identify vitamins for classification. It was during that same time period that scientists were able to understand better the prevention and treatment of deficiency related diseases like scurvy, rickets, aneamias, etc.
Unfortunately, studies have shown that the levels of vitamins and minerals in our foods have significantly decreased over the past few decades. Modern agriculture practices have often prioritized yield over quality resulting in the depletion of essential nutrients. The use of chemical pesticides, herbicides, and fertilizers have helped produce more food, but it's been less nutritious because the life in the soil has been depleted. This trend is concerning because it means that even if people are consuming the recommended amounts of fruits, vegetables, and proteins they may not be getting the same nutritional benefits as previous generations. We regularly discuss how important soil health is to nutrition and how regenerative agriculture can help overcome these deficiencies.
This is why our farms focus so much on building healthy soil. As it turns out, soil is the key to nutrition. Deep, healthy soils are important to the environment as well. They help retain rain water so erosion and runoff is limited. This means rivers, streams and lakes are healthier. Healthy soils also help recycle atmospheric carbon which means air quality is better for everyone. Please support regenerative farming efforts.
