Dear John,
September 15th dawned with frost on the pumpkin in Northeast Missouri. The first taste of fall was complete with clear skies and light breezes in the lower 70's. Plus, a reminder of the 4 true seasons we enjoy in American's heartland.
For those of you into college football tail gates, we suggest surprising your family and friends with grass fed beef and lamb burgers. Don't forget the pork brats, Italian and polish options!
If the University of Missouri goes undefeated this year, we will supply a complimentary 20 pound sampler for the bowl game to the first person that reminds us of this offer.
As we approach the completion of 259 days of 2007, we stop to say thanks to all that have supported our endeavors year to date.
Best Regards,
John, Lee Ann, Lynn, Megan, On behalf of the farm families of U.S. Wellness Meats.

High Gas Prices Could Make U.S. Lose Weight
Study: Extra $1 in gas prices could cut obesity by 15 percent after 5 years Higher gasoline prices may slim more than just wallets, according to a new study from Washington University in St. Louis. The study found that an additional $1 per gallon in real gasoline prices would reduce U.S. obesity by 15 percent after five years.
The report, by Charles Courtenance, found that the 13 percent rise in obesity between 1979 and 2004 can be attributed to falling pump prices, as people were more willing to drive everywhere, when they could actually walk or ride a bicycle.
Courtenance said he became interested in the link after rising gasoline prices made him think about eschewing his car for public transport.
"I was pumping gas one day, thinking with gas prices so high I may have to take the Metro," he said, referring to the public transportation system serving the St. Louis area.
Courtenance said he figured he would get an extra 30 minutes of exercise per day by walking to and from the Metro station.
Obesity, defined as having a body mass index greater than 30, has been considered to factor in as many as 112,000 deaths annually.
U.S. health costs related to obesity are estimated at $117 billion per year as studies sponsored by the U.S. government have linked it with high blood pressure, diabetes, heart disease and stroke.

Comment from U.S. Wellness Meats;
In 2003, Mississippi, Alabama, West Virginia, Michigan and Wisconsin had the dubious distinction of being 30% obese as states. On the other hand, Colorado was the lone state at 10% obese . |

Preventing Pre-Menstrual Syndrome with Diet
Premenstrual syndrome (known as PMS) involves a variety of physical, mental, and behavioral symptoms associated with a woman's menstrual cycle. By definition, symptoms occur during the days before a woman's period starts. They usually go away after the first day or two of flow.
PMS is a complex health concern. Up to 80% of women experience symptoms of PMS. PMS can occur at any age after the start of menstruation, but it becomes more noticeable in women aged 30-49 years. For a small number of women, it can be severely incapacitating, and becomes something called 'premenstrual dysphoric disorder (PMDD). PMS and PMDD are not the same. Women with PMDD become seriously depressed and/or anxious for a week or more before their periods, to the point of interfering with their lives, jobs, and relationships. PMDD occurs in about 10-20% of menstruating women.

DR. ERIC SERRANO M.D., M.S., B.C.
|
Dr. Serrano,
Do you think that protein deficiency is common, and are there symptoms that are a good predictor that a diet is lacking sufficient protein? Is it possible that some people require less protein than others, or is it simply dependent on age, sex, and activity level?
Thank you.
S.D.
Dear S.D:
Do I think protein deficiency is common? My answer is going to surprise you. Yes and no.
Many people depend on fast food or "supplements". They forget that the source of protein makes a difference. For example, a person that consumes a "McDonalds" style chicken, will assume they have had all the protein required from that chicken, but this is not true. The chicken or the beef was "processed" so it can taste good. During this process, flavor, parts, and chemicals were added or taken away making the chicken or the beef less undigestible for our digestive system. Yes, we consumed enough proteins but we are not what we eat but what we absorb!
If you are eating a chicken or a beef that is not raised properly and then goes through manufacturing, then we might not be absorbing or digesting what we need. Unfortunately, the body has to spend time cleaning or filtering all of the toxins.
In addition, people suffer from mal-digestion because they do not consume the necessary nutrients for a healthy digestive system. We also spend the money on powders or pills instead of meals and these powders do not provide certain nutrients that we are not aware of. Also, consumers are developing allergies to certain foods, like milk, eggs because they eat the same over and over creating a poor environment for absorption but a great one for allergies.
I do believe that people do require more protein sometimes and others require low, but it is dependent in the person and health state of that person. A good example is a diabetic that consumes high levels of cheese will notice that their sugars do not go down even though they are not consuming sugars. The solution is to change the protein source, due to the fats and the type of protein in the cheese. Try cottage cheese in a diabetic and find out what happens to his or hers sugars.
These are my rules: 1. Consume organic as much as possible 2. The more active you are the more you need 3. Always vary your intake of proteins 4.When you heat proteins, it changes the structure which changes the influence in the body 5. In females, reduce the amount if decreasing weight is the goal 6. Protein absorption is affected by manufacturing, processing and food combination; ie, to much liquid like carbonated water will decrease absorption 7. Correct poor digestion by adding enzymes 8. If taking anti ulcer, or anti reflux medication your absorption is decreased, because we need acid to digest, see number 6 9. Powders and pills do not make up for real meals . . . everyday we discover new nutrients or amino acids. Did you know that Ohio State discovered two new amino acids this year? 10. Age also affects absorption due to the poor state of the digestive system. The older you are, the higher your protein intake should be.

| FAT FOR ENERGY AND ATHLETIC POWER
Eating fat in general does not make you fat. Eating unhealthy fat does. Knowing the difference between the types of fat will ensure that you do not suffer from deficiencies in fat soluble vitamins such as A, D, E and K. The consequence can be obesity, low energy, poor concentration, unsightly skin complexion and depression. Clinical manifestations include insulin resistance, type II diabetes, heart disease and even cancer.
Healthy fat is essential for proper growth, development, athletic performance and maintenance of good health. It provides your body with vital energy without causing you to gain weight. In sharp contrast to carbohydrates and sugar, healthy fat tells your body to burn fat and makes you feel fuller quicker! These positive attributes of fat are often overlooked. But they are real.
Most important, consuming healthy fat does not cause a spike in the fat storing hormone known as insulin. Instead, it keeps insulin levels low (or controlled) relative to sugar and carbohydrate (carb) consumption. When insulin is controlled, the body is better equipped to take part in fat burning courtesy of "thermogenesis."
Thermogenesis is the conversion of fat to heat and physical energy (lipolysis). The best athletes in the world have mastered thermogenesis - either through diet, supplementation, or both.
Thermogenesis is a powerful effect for athletes who consume healthy fat rather than gobs of sugar (sucrose, fructose, high-fructose corn syrup), artificial flavors and carbs. Sparking it (either by diet or supplementation) is the Holy-Grail for eliciting lean muscle mass, energy and raw athletic power. Let me clarify this very important point.
When thermogenesis is active, the body can utilize fat as a substrate for heat production as well as ATP production. ATP is the chief energy and strength producing molecule within the body. The more you have, the better you perform.
A single fat molecule can produce a whopping 129 molecules of ATP. In contrast, if thermogenesis is not being activated the body is forced to utilize an inferior source of ATP production - carbohydrates. A single carbohydrate molecule produces a paltry 38 molecules of ATP! Do the math.
The difference between fat and carbohydrates as fuel substrates is the difference between athletic excellence and mediocrity. It's the difference between sustained energy and "bonking." Promoters of sports gels and sugar fortified energy bars and drinks ignore this basic biochemistry - or don't understand it.
In sum, healthy fat doesn't make you fat, it satisfies and energizes. Healthy fats can be obtained from coconut oil (in tea or used for cooking), cod-liver oil (contains omega-3 fats known as EPA and DHA with the added value of vitamin D), olive oil, avocados (omega-9), eggs (raw, scrambled, hard-boiled, whatever), fish, nuts, seeds, chicken and grass fed beef. My favorite source of these healthy fats is www.uswellnessmeats.com.
Unhealthy fats make you fat, sick and weak. These are the much talked-about trans fats. Trans fats are the top contributors to obesity and the medical complications that follow. They have given fat in general a bad name. Habitual consumption of trans fats leads not only to obesity but also heart disease and type II diabetes.
Foreign to the human body, trans fat consumption obstructs proper metabolism and thermogenesis. Specifically, trans fat invades cell membranes. Once incorporated into the membrane, cells become brittle and unresponsive to insulin and glucose. Blood levels of insulin and glucose skyrocket. Instead of being renewed by food, cells are resistant to nutrients. Obesity, malnutrition and pre-mature aging set in. This is the underlying cause of the impending health crisis that looms over an estimated 90 million Americans - insulin resistance. It is also the cause of weakened athletic ability.
Trans fats are made when food manufacturers increase the shelf life and stability of their foods. The process is known as "hydrogenation." To discover if a food contains trans fat look at the ingredient list on the food label. They are listed as; "shortening," "partially hydrogenated vegetable oil" or "hydrogenated vegetable oil." Ingredients are listed in descending order of predominance on a food label. Smaller amounts are present when the ingredient is close to the end of the list.
If you eat fast food or anything out of a "box" beware! You are mainly consuming trans fats! Other bad fats are found in vegetable oils such as corn oil (due to high content of carcinogenic omega-6 fatty acids).
Adhere to this basic nutrition and watch your energy and athletic ability soar.

WHAT OUR CUSTOMERS ARE SAYING
|
Hi folks,
I recently received my first order from you guys. I live in St. Louis County, Missouri, and as you know, a few weeks ago our temperatures were up in the low 100's, and the humidity was almost thick enough to shower in, lol.
I was calling myself all sorts of names for ordering frozen meat during weather like that. I figured it was going to arrive here "already cooked" because of the weather. I WAS SO HAPPY TO SEE THE MEAT ARRIVE HERE STILL FROZEN!!!!!! :-)
We cook the roasts in a crockpot and they always turn out real nice, but last night, using our Flavorwave and your ribeyes, my husband and I ate the best steaks we've ever had. The people who buy your meats really need to own one of those Flavorwaves. The difference is incredible. I don't care about meat all that much, but after tasting last night's ribeyes, I just ordered more ribeyes from you guys. Eating meat never tasted so good, lol. :-)
THANK YOU, Renee Ballwin, MO

combinations of beef,
lamb,
pork,
butter,
goat,
shrimp
and raw
cheese.
This is our way of saying thank you for purchasing in volume. This

specific to any category. Each 40 pound interval will yield the discount. For example,
80 pounds of product will yield a $50 discount and a 120 pound purchase will

|
MINIMUM PURCHASE
|
Our new format enacted in April 2005 requires a $75 minimum
purchase and a 7 pound minimum combined purchase of beef,
lamb,
pork,
nutraceuticals,
gourmet
rabbit, soap,
organic
shrimp, grass-fed
goat, grass-fed
bison, raw
cheese, single
piece poultry, and butter.

separate cold storage centers where those products are produced. It is not
efficient to ship one package of beef as a stand alone item when the balance of
the order originates 400 miles away.
The shopping cart will keep track and remind you if you are under the 7 pound
limit for a combination of beef, lamb, pork, raw cheese, butter, goat, shrimp,
soap and single honey bottle purchases. Red font will appear under the shopping
cart if you are under the minimum price or pound requirements.
