GRASS-FED POWERED ATHLETE CORNER

John Wood shared a microphone on KRXA talk radio Saturday with host Glenn Brooks and Jon Andersen in a spirited discussion on the health benefits of grass-fed meat. Jon was asked what motivated him to commence his legendary work out schedule as a 15 year old. Jon responded he was a slightly over weight young man attempting to play high school sports when Jon flipped on a 'stoic training' switch on that has never been turned off. The key to Jon's success is he has never taken time off from training in 20 years. You will never get ahead in an on again, off again training regime. The first question Jon is asked is what do you eat. Jon was quick to point out that many folks consume food with little essential nutrition on board. Jon's biggest gains came when grass-fed was introduced in March of 2004. The epiphany came after doing his own research based on the foundation poured by U.S. Wellness staff at the Fit Expo in Pasadena, CA. when the grass-fed beef journey began. If all goes well in the next month, Jon should have a very interesting story to tell in a future newsletter. |

Mysterious Disease is America's Epidemic
It can begin as severe intestinal distress, stomach pains, and diarrhea, malnutrition and extreme weight loss, or it can be as benign and subtle as anemia, osteoporosis, thyroid disease, or acid reflux. Hi Dr. Serrano:
Because of a family history of arthritis and blood work that indicated a predisposition to rheumatoid arthritis, I was told to avoid foods high in arachidonic acid, i.e. red meat, egg yolks, etc. I am wondering if grass fed beef is lower in arachidonic acid than grain fed beef? Thanks for any information you can provide. I have eaten grass fed beef for a couple of years and hope I don't have to give it up!

Dear Janet: NO WAY. Arthritis has nothing to do with the fats, especially rheumatoid arthritis, which has actually been associated with food allergies and viral infections. Recently some research has shown that the antibodies that attack and destroy your joints are identical to the gluten antibodies that your body produces. Almost every joint, pardon, every joint is made out of fat, and to make it worst they are made of saturated fats, so eating all those good things, will make your joints better. Now because you are talking about RA, we need to find out what you are allergic to, or what your body reacts with, usually a protein or a pieces of protein, or the body is intolerant to certain foods, and these foods are:
- gluten
- casein
- corn
- egg
- lactose
No fat in this list, so go for it, and enjoy your organic meats with fats.

You're about to bite into a nice, juicy steak at your favorite restaurant, when the waiter comes to your table and asks, "Do you all have enough antibiotics here? Are you enjoying your added lysine? How's the synthetic hormone?"
It's true. Unless you take steps to prevent it, the steak at your local restaurant or grocery store has artificial substances that, if given a choice, you wouldn't eat.
The cause is a simple one to understand: Produce the maximum amount of saleable meat per animal, as fast as possible, at the lowest possible cost. Commercial ranchers add growth hormones and feed low grade antibiotics to protect the liver from the acidic starch diet. This accelerates the animals' growth and yield, and protects them from the pathological bacteria they're exposed to.
Meanwhile, they're denied grasses and legumes, the only foods that their digestive systems have evolved to properly metabolize. Instead, they eat a high starch diet feed grains and a plant protein with unnatural additives. The result is a fat, inflamed and diseased animal. When you eat their meat, they have potential to pass these problems on to you.
High starch diet commercial cattle have significant less nutritional value than their pasture-fed relatives. A study in the Journal of Animal Science found that the more grass cattle ate, the more nutrient-rich their beef became. CLA and omega 3's rise while omega 6's decline.
These differences include your essential fatty acids, the omega-3 fat, CLA - so important for your brain and, the must-have energy nutrient for your heart, CoQ10.
For most of the 6,000 years since humans first domesticated cattle, they freely grazed hillsides, fields, and pastureland. If it's tasty, natural, and nutritious beef you're after, two words of advice: Go grass-fed.

Korean Grilled Beef From the Eating Well New Favorites Cookbook

Ingredients:
- 1 T Sesame Seeds
- Pinch of Salt
- 1 1/2 lbs of boneless sirloin steak
- 6 scallions trimmed and thinly sliced
- 4 cloves garlic, finely chopped
- 3 T finely chopped fresh ginger
- 3 T soy sauce
- 1 T rice vinegar
- 1 T olive oil
- 1 1/2 tsp sugar
- Generous grinding of fresh black peppercorns
Directions:
- In a small heavy skillet, toast sesame seeds over medium heat until light brown. Transfer to a mortar add salt and crush with a pestle. Set aside.
- Score steak deeply in a 1" criss-cross pattern. Turn over and score the second side. Cover with plastic wrap and pound lightly with a mallet or heavy pan to tenderize.
- In a shallow dish large enough to hold the steak, combine scallions, garlic, ginger, soy sauce, vinegar, oil, sugar, pepper and the marinade. cover and marinate in the refrigerator for at least 2 hours or up to 8 hours, turning from time to time.
- Prepare a hot charcoal fire. Once the coals are white-hot, remove the meat from the marinade and grill until medium rare, about 4 minutes per side. Slice into thin strips and serve at once.
