Dear John,
When you think about the time, energy, blood, sweat and tears that goes into an Olympic athlete's training regimen, you would have to think that diet plays a very key part of that training program. Every aspect of the Olympic competitor's training program is scientifically analzyed, researched and tried, until it is perfected.
Diet plays a key role in fueling a winning athletic performance, and Deena Kastor's diet has helped her roar across finish line after finish line in the marathon. She is now on her way to Beijing this summer and running on muscles built on U.S. Wellness Meats. We had a chance to chat with her about her training regimen, her thoughts on competing, and how she feels about her diet.
Deena is a strong proponent of organic, all natural foods and U.S. Wellness grass-fed meats, such as U.S.Wellness beef, lamb, and free range chicken.
In turn, we support her efforts and wish her great success in the Beijing Olympics this summer. We wish you fleet feet and great health, Deena!
We strongly believe in our products and stand behind them as the highest quality nutrition you can buy. We hope you will pass on the good word to others and continue to strive for a healthier you.
John, Lee Ann, Megan, Lacey, and McKenzie, on behalf of the farm families of U.S. Wellness Meats.

................................................................................................... More Good News About Omega 3 Fatty Acids and Your Brain
A new review found controversial results from studies on the effects of eicosapentaenoic acid, a type of omega-3 fatty acid, on psychiatric and neurodegenerative diseases.
Neurodegenerative diseases are neurological disorders marked by the loss of nerve cells. Examples include Alzheimer's disease, Huntington's disease and Parkinson's disease.
Eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are both contained in fish oil. Oily fish, such as salmon, tuna, and herring, are good sources of EPA. Fish, liver, and egg yolks are good sources of DHA. In addition, the body converts alpha-linolenic acid, which is commonly found in nuts, seeds, and vegetable oils, into EPA and DHA.
There is evidence from multiple large-scale population (epidemiologic) studies and randomized controlled trials that intake of recommended amounts of DHA and EPA in the form of dietary fish, grass fed meats, or fish oil supplements lowers triglycerides, reduces the risk of death, heart attack, dangerous abnormal heart rhythms and stroke in people with known cardiovascular disease, slows the buildup of atherosclerotic plaques ("hardening of the arteries") and lowers blood pressure slightly. However, high doses may have harmful effects, such as an increased risk of bleeding.
Researchers from the University of Prince Edward Island in Canada explained that decreased n-3 fatty acid levels have been reported in patients with depression, schizophrenia or Alzheimer's disease.
The review reported that recently, EPA has been used to treat several psychiatric and neurodegenerative diseases due to its anti-inflammatory and neuroprotective effects. A total of six out of seven clinical trials have shown that EPA significantly improved symptoms of depression when compared with the placebo-treated populations.
Several investigations have also reported that EPA could effectively treat schizophrenia. A case report and a clinical trial have shown that EPA was beneficial for the management of most symptoms of Huntington's disease, while a more extensive clinical investigation has demonstrated that EPA could only improve motor functions.
The authors concluded that further clinical studies are required to fully explore the effects of EPA on other neurodegenerative diseases. The limitations of previous studies and further research directions were also discussed in the review.
The American Heart Association (AHA) recommends including fish or grass fed meats in the diet for all individuals, and fish oil supplements in those with a history of cardiovascular disease.

TRIBUTE TO JESSE MARUNDE
Callie Marunde and John ' Sarge' Allen went the extra mile on May 3 to make the annual Sequim, Washington strongman contest very special for the small town perched on the Strait of Juan de Fuca on the North coast of Washington state.
Over 1000 strength enthusiasts travel from near and far to watch the 2 hour contest won by local strongman Marshall White. However, the crowd favorite hands down was the legendary Odd Haugen who placed 5th at 58 years young.
Callie and John rolled out the red carpet for 2006 World's Strongest Man American Phil Pfister, 1998 Swedish winner Magnus Samuelson and renown U.S. Competitors Karl Gillingham and Dave Ostlund.
The event gained so much notoriety they had to turn down contestants. A much bigger venue is planned for 2009.
Eighty pounds of U.S. Wellness burger and shredded beef in BBQ sauce was relished in a competitor post party with enormous appetites.
A tip of the hat from U.S. Wellness to Callie and Sarge for a job well done. Jesse's legend grows in the Pacific Northwest.

Interview with Deena Kastor, 2008 Top U.S. Olympic Team Marathoner
I had the opportunity to chat with Deena Kastor, our 2008 U.S. Olympic Team marathon runner and a big advocate of U.S. Wellness Meats and grass-fed beef. We discussed diet, both for training and recovery, carb-loading, hydration, rest and recovery.
How did you get started, and at what age? I started running when I was 11. My mother had me join a local track club in order to be more social with kids my age. I loved it from the first day of practice.
We ran in the Santa Monica Mountains and I always wanted to run farther to see where the trails went. I still get that same feeling today. There is never enough time to follow a trail to its end. Now, I am 35 years old and still love this sport. What is your current training regimen like? While marathon training I am logging up to 140 miles a week. It is a full time job, and what sets elite runners apart from your weekend warrior is that we elites have the time to rest and nurture ourselves.
When we can refuel properly, takes naps, daily massages, ice baths, and strength training it all aids in our recovery so we can workout harder and stronger the next day. I wake up at 6am and don't clock-out until 7 each night.
Recovery? I sleep about 8-10 hours every night and take a two-hour nap each afternoon. In the middle of each day I get under the sheets with a big grin on my face and say to myself, "ah, this is my job!" What does your training diet consist of? I take nutrition seriously, but the choices seem instinctual. I eat a balance of protein and carbs at every meal and snack. On average, I consume about 4000 calories a day and I make sure these are quality foods.
When at the store, I buy only organic vegetables. Because I live in the mountain town of Mammoth Lakes, California, I also order fruits and vegetables online so I have a variety of nutrients.

How to Lose Weight Naturally & Reverse Diabetes in 90 Days Without Giving Up Sweets
By: Shane Ellison - The People's Chemist Copyright © 2008 www.thepeopleschemist.com
If you could make one simple change in your diet to help you lose weight, melt fat, sleep better, and improve your memory, would you do it? What if that same simple dietary change could also: · Reverse diabetes? · Increase your energy? · Conquer depression? · Save your eyesight? · Restore mental alertness? · Increase your lifespan?
Now, this may sound too good to be true.
But it's not.
And you don't have to take drugs. Nor do you have to try some newfangled experimental supplements. Or stop eating. Or even give up the foods you love.
It's as simple as reducing the amount of sugar you eat.
This is not a trick.
You can actually give up sugar and keep your sweet tooth happy.
This is the greatest health secret of all time. And I'm going to teach you how to incorporate it into your life so you can lose weight without taking drugs. But, before I tell you how, I want you to know....
Why You Should Give Up Sugar.
Have you ever been plagued by hard-to-diagnose health problems like why you can't lose weight, no matter how hard you exercise or diet?
Well, it's not all in your head. It could be your sugar addiction. In fact a recent study proves that sweets are more addictive than cocaine.
Today, the average consumption of sugar is a whopping 160 pounds! It's suicide in slow motion. Sugar addicts eliminate 11-20 years from their lifespan.
Now I'm not saying to forget your sweet tooth completely.
We all have the need to get a sweet fix. It's part of our biological makeup. Men suck down sodas to make it through the "afternoon blues."
The irony is that your body doesn't actually need any sugar. Over time, "sweetener addiction" leads to a host of dreaded diseases like insulin resistance, heart disease, diabetes, and cancer. To avoid the sabotage, you must understand how to get your sweet fix without becoming addicted.
How to Reduce your Sugar Levels, Lose Weight & Reverse the Effects of Diabetes.
1. Understand how much sugar you are putting into their body.
Most people are simply giving into an addiction while slowly ruining their health. To judge whether or not you are at risk, read your food labels for one day and count how many grams of sugar you are eating. Multiply your answer by 365. Then simply divide by 453.9. This will tell you how many pounds of sugar you are stuffing into your mouth annually!
2. Don't replace table sugar with artificial sweetener Splenda to get your sweet fix.
Splenda is a perfect example of a drug in disguise. It contains the drug sucralose. Invented in a pesticide lab, this chemical is 600 times sweeter than sugar. To make sucralose, chlorine is used. And, chlorine has a split personality.
It can be harmless or it can be life threatening. In combo with sodium, chlorine forms a harmless ionic bond to yield table salt. When used with carbon, the chlorine atom in sucralose forms a covalent bond. The end result is deadly organochlorine, known simply as a "Really Nasty Form of Chlorine."
Unlike ionic bonds, covalently bound chlorines are a big no-no for the human body. They yield insecticides, pesticides, and herbicides. This is not something you want in your sports drink or your child's lunchbox.
3. Avoid Equal and Nutrasweet.
Teaching organic chemistry, I taught my students how to identify the active ingredients in soda using a technique known as TLC (Thin Layer Chromatography). They discovered that the byproducts of sodas containing aspartame are all known poisons that will slowly kill you: methanol, phenylalanine, and aspartic acid. I never saw my students with a diet soda after that. Guess what Equal and Nutrasweet contains.
4. Use Natural Sweeteners as a Safe Alternative to Artificial Sweeteners. Alternatives like erythritol, agave, xylitol and luo han guo can be found in abundance. Choosing which natural sweetener to use depends on which one tastes best to you.
How to Choose Which Natural Sweetener to Use.
Agave nectar usually wins. It stimulates taste buds exactly the same way sucrose does. But unlike common table sugar, very little of its active ingredient - insulin - is absorbed. Therefore, you are protected from the dangers of sugar addiction.
Agave is a bit harder to bake with. This is where the safe and natural erythritol wins. You can replace it gram for gram with sugar. Even better, I like to use 25% table sugar and 75% erythritol in baking and ice cream. You won't even notice the healthy difference. That's the real magic here!
Getting Your Sweet Fix Doesn't Have to be Deadly.
All natural sweeteners are known to help control appetite, keep insulin and blood sugar low, and prevent the formation of age accelerating molecules in our body. None of them are addicting. Nor will they diminish your lifespan. They are perfect to use with my Hormone Intelligence Therapy (HIT) program for reversing diabetes, losing fat and feeling great in 90 days.
If you learn to gauge your sugar intake with The People's Chemist Death by Sugar Calculator and start using natural sweeteners, you will lose weight guaranteed. You won't be plagued by hard-to-diagnose health problems. And you'll have more years to enjoy life and those you love.

DR. ERIC SERRANO M.D., M.S., B.C.

Dr. Serrano,
I read your interview with Dave Tate and see that you recommend good brands of fish oils. My wife and I both had heart attacks in 2007 and as a result had stents installed. She also had a double bypass in 2000. Since that time we have been taking lots of fish oil to help prevent this from happening again and of course grass-fed-beef and organic foods. I have read an article from Ray Peat Ph.D. (http://raypeat.com/articles/articles/fishoil.shtml ) about fish oils and he seems so creditable that we have quit taking fish oils as part of our supplements. Could you offer your opinion about this? Thank you for your articles,
Gary H. ...........................................................................................
Dear Gary,
Congratulations because you have taken control of your life by making the right choices. I know your question is about supplements but I will like to make some recommendations before just letting you know about fish oils.
1 - Make sure you stay away from fats that are not organic
2 - lower cheese consumption
3 - exercise
4 - decrease your intake of polyunsaturated fats unless mono or fish oils
5 - stay away from milk
6 - when consuming fish oils make sure you consume vitamin E, D, and also balance them with olive oil, CLA, GLA, and saturated fats
7 - do not forget you must still consume alpha linolenic acid and alpha linoleic acid
8 - try to keep a ratio of omega 6 to omega -3, i still do not know what optimal is but try to consume more omega 3 than 6 and it will be balance
All the best,
Dr. Serrano

WHAT OUR CUSTOMERS ARE SAYING
|
John,
Just fried some of your new bologna for breakfast and it was off the chart. The mix of beef to seasoning ratio was perfect as the crisp grass-fed flavor was not over seasoning shadowed. Typical in commercial bologna. Seasoning was mild and very middle of the road.
Simply sliced the bologna into 1/4 inch slices and fried it quickly in the skillet for a very tasty breakfast nitrate and MSG free.
That bologna is a winner!
