The New Year has come in with a blast of cold weather in Northeast Missouri this past week. We have been experiencing below zero temperatures, and have been blanketed in snow for the last 2 weeks. We are hoping for warmer weather this week!
A recent article in the NY Times has sparked several questions and emails regarding the use of ammonia to kill E.Coli 0157:H7 and Salmonella by injecting it into beef trimmings. Rest assured, this is a practice we do not use and certainly do not condone. Grass-fed beef is naturally safer from the risk of contamination due to the high pH of the first stomach in the grazing animal. Grain-fed animals have a very acidic digestive system from their starch diet, which leads to a greater risk of contamination since those bacteria thrive in acidic environments. We are still watching S. 510 (FDA Food Safety Modernization Act of 2009), a scary piece of legislature that has been passed in Committee and will be voted on by the Senate early this year, possibly this month. This bill will subject small, local food providers to the same burdensome, strict requirements as large corporations, thus making it harder for small, sustainable farms to stay in business. Please take time this month to contact your local Senator to let them know about the importance of local, sustainable food. Let's concentrate on stronger regulations for industry giants that are contaminating our food supply with E.coli and Salmonella, and give kudos to small farmers who are providing clean, nutrient-dense foods to local consumers.

A Good Reason for Pregnant Women to Eat
Eggs--and Even Bacon!
If you're pregnant, there is a very good
reason to eat bacon and eggs--but make that nitrite-free bacon and omega-3,
free range eggs. A new research study published in the January 2010 print issue
of the FASEB Journal
by a team of University of North Carolina researchers shows that choline plays
a critical role in helping fetal brains develop regions associated with memory.
Memory is very important for learning and success in school among other things.
Choline is found in primarily in (grass fed) meats, including pork, as well as
chicken eggs-especially free range organic, high omega 3 eggs.
"The study indicates that the diet of a
pregnant mother, especially the amount of choline in the diet, can change the
epigenetic switches that control brain development in the fetus," said
Steven Zeisel, the senior scientist involved in the work and a senior member of
the FASEB Journal's
editorial board. "Understanding more about how diet can control or modify
genes could be very important for assuring optimal fetal development."
The researchers made this discovery by
feeding two groups of pregnant mice different diets during the time period when
the fetus develops its hippocampus, that part of the brain responsible for
memory. One group received no choline while the other received choline. The
group that received no choline had changes in the proteins responsible for the
creation of new brain cells.

Journal, says, "This is yet another example
showing that good prenatal nutrition is vitally important throughout a child's
entire lifetime."
The Agricultural Research Service's Nutrient
Data Laboratory makes a database available to the public in an effort to help
them get healthful amounts of choline in their diets. The database provides
researchers and consumers with the means to estimate daily choline intake from
consumption of more than 400 different foods and can be accessed HERE.
The Agricultural Research Service says that "experts suggest that an
adequate choline intake is 425 milligrams a day for women and 550 milligrams a
day for men. Top sources of choline include grass-fed meat and liver, grass-fed butter, nuts, and (free range, high omega 3) eggs.

What is Candida and How is it Affected by Your Diet?
Candida albicans is a type of yeast that normally resides in our mouth, throat, digestive tract, anus and vagina. It lives in our intestines with a variety of other microorganisms and actually performs a couple important functions. For most people the growth of Candida remains in check by the immune system and beneficial probiotic bacteria in the body. The problem occurs when something upsets the balance of bacteria in the body and this allows the yeast organism to proliferate and take over all the healthy microorganisms.
The main contributors of Candida overgrowth are an immune system that is weakened in some way, plus a high-carbohydrate intake. We don't all have to have some awful disease to have a weakened immune system. A weak immune system can result from the presence of environmental allergens, food allergies or sensitivities (gluten-intolerant people are highly susceptible to yeast infections), a diet high in commercially produced meat and dairy products (raised with antibiotics), too many carbohydrates and sugars (raises the body's blood sugar levels with feed Candida), some medications (birth control, NSAID's, antibiotics, steroids, antacids, and more), stress, minor illnesses, alcohol, pregnancy, smoking, diabetes and other chronic health conditions. In addition, vegetarians, because of their typical high carb intake are often susceptible to yeast infections as well.
Local infections such as oral thrush (babies tend to get this), skin rashes, and vaginal yeast infections are the obvious result of a yeast infection. Less obvious yeast infections are actually more common, and most people with a chronic Candida overgrowth may feel bad, but may never get to the root cause of the problem. It is believed that a large percent of the population, especially those who follow the 'Standard American Diet' may have a Candida problem to some degree. Candida can also enter the blood stream through the intestines, and then make its way into any organ of the body. To make matters worse it emits over 70 different toxins into the body. Some people may even become allergic to the yeast itself.
Some practitioners believe that overgrowth of the Candida albicans yeast in the intestines is responsible for a "yeast syndrome" that results in symptoms such as fatigue, headache, mood swings, sinus congestion, depression, poor memory and concentration (feeling 'foggy headed'), and cravings for sweets. There are several books out on this subject, most notably books written by Dr. Crook who first discovered this yeast connection.
Basically a yeast overgrowth boils down to these factors:
· Environmental allergens that run down the body's immune system · Anything that lowers the body's immune system for any period of time · Sugar in the diet, from processed foods, flours and sugars
Candida is nearly epidemic in our society and is responsible for many of the chronic illness categories we see so frequently. Candida symptoms are vast and all encompassing and can even incapacitate the individual.
Most people are unaware that it even exists, because most mainstream doctors are uneducated about its impact on our health. People suffering from this condition often go from doctor to doctor for years and are usually considered to be hypochondriacs or told it is stress or a psychiatric problem, before ever discovering the real culprit. Often we have to be our own health sleuths and get to the root of the problem ourselves.
Once this hardy organism proliferates in the body, it can wreak havoc in many ways and is the initiator of many common maladies, conditions, syndromes and illnesses in our population.
Some of the most frequent Candida symptoms are:
- abdominal gas and bloating
- headaches
- excessive fatigue
- anxiety
- vaginitis
- rectal itching
- cravings for sweets and carbs
- inability to think clearly or concentrate
- mood swings

President Appoints Fox to Guard Henhouse
Our president was elected on a platform of change. But when it comes to food safety it's business as usual. Why would I say this? Look at President Obama's choices to head the USDA and the FDA: Tom Vilsack and Michael Taylor.
Mr. Vilsack is a long-time supporter of genetically modified foods. In fact, Vilsack recently pushed his GMO agenda at the Food Security Conference in Iowa. But Michael Taylor, the new "food safety czar," is the proverbial fox guarding the henhouse. Taylor has a long history of lobbying for - and being employed by - Big-Agra companies with a vested interest in GMOs. Not only was Taylor a vice president at Monsanto, he was one of the FDA officials who signed off on an FDA policy stating that GMOs don't need safety testing. And who benefits? You guessed it: Monsanto.
Court Case Uncovers Monsanto Bribes of Government Officials
Back in 2000, Monsanto wanted to plant over 49,000 acres of genetically modified cotton in Indonesia. But hours before the agreement with Indonesia's government was to be signed, it was shot down by the Ministers of Economy and Environment. There had been no environmental assessment, as required by Indonesian law.
But just five months later, the Minister of Agriculture signed the agreement with Monsanto, without the required environmental assessment. Why? As it turns out, it was a $50,000 bribe from a Monsanto employee that did the trick. But that $50,000 was just the tip of the iceberg. As it turned out in U.S. court, Monsanto had paid some $700,000 in bribes to Indonesian officials, and wound up slapped with a $1.5 million fine.1
According to a report in the Asia Times, 140 Indonesian officials received bribes from Monsanto over the deal, including a former Minster of Agriculture, whose wife received a house worth $373,990.
Now, I realize that Indonesia was known at the time for official corruption. But if the genetically modified crop was really safe, wouldn't it be easier to simply prepare the required assessment?
Even more disturbing is an earlier U.S. government policy that cleared the way for us to become unwilling lab rats.
Mutant Killers Masquerading as Real Food
When giant agricultural corporations wanted to flood the market with genetically modified seeds, there was a problem. What about safety? What were the effects of eating an ear of corn laced with pesticide? What would happen if someone ate soybeans designed to survive the potent herbicide Round-up? Not a problem, announced the federal government. As long as these "Frankenfoods" are "substantially equivalent" to the real thing, the GMO products would be deemed safe - and made available for sale. So, if a GMO food - or other plant - is "substantially equivalent" in composition and nutritional characteristics, it doesn't have to be tested for safety...

2 Reasons "The Biggest Losers" Can't Stay Winners

I have my own set of "fat and after" photos. And, if you're carrying some "extra junk-in-the-trunk," so can you, if you want. I like to look at my "fat and after" pictures frequently. To me, they reflect more than a radical physical transformation. They reflect a life change and serve as a reminder of my hostage situation.
When I was fat, I lived life on life's terms. I ate what life served, usually meatball subs and Oatmeal Cream Pies (in moderation - I rationalized). I drank what life poured, usually liquid blubber masquerading as diet soda. And I exercised when life allowed, usually a few reps of bench press twice a week.
To me, life was like the proverbial pusher, always tempting me with its malignant, short term pleasures. And every time I gave in, I traded one of life's simple and forgotten long-term treasures - like keeping the same belt size or chasing my kids endlessly in the park. As life's malignancies caught up to me, I decided to live life on my terms. And my "after" photo shows how my body responded: It shed the fat that was holding me back from living young.
We know fat kills. Some people make excuses not to shed it, while others risk it all to get their own "fat and after" photos. Nothing reflects this better than the hit show, "The Biggest Loser." Unfortunately, very few Biggest Losers remain winners.
Ryan Benson lost 122 lbs to win the first season but regained 32 lbs within five days simply by drinking water. Contestant Kai Hibbard, 28, spent the night before her final weigh-in crawling in and out of a sauna for six hours, consuming only sugar-free Jell-O for a week and sucking down natural diuretics. Clearly, these are signs that The Biggest Losers aren't winners. Even the most successful biggest loser reflects this. As the historic Biggest Loser, EriK Chopin lost over 200lbs. Under all that junk was a shining, handsome man, with decades of living young added to his lifespan. But it didn't last either. He quickly rebounded and gained back over 100lbs. Life's malignant pleasures dealt him type II diabetes, which eliminates an estimated 11 to 20 years of life.
Today, Erik travels the country encouraging early diabetic testing. On the verge of giving pharmaceutical fellatio, his fat loss message is pushed aside for a more marketable, warm and fuzzy message of, "We all need a stronger relationship with our pharmacists." (I had to bite my black leather wristband when I heard that.)
Do I still need to say it? No. But I want to...
The Biggest Loser has inherent flaws, at best.
At worst, it's nothing more than a profitable way to exploit obese people by using the antiquated fat loss tricks of a weak high school wrestling team. In the long run, contestants are better off following the gluttonous antics of Adam Richman in "Man vs. Food."
2 Reasons The Biggest Losers Can't Stay Winners
They Don't Count the "Right" Calories Like drug reps who moonlight as doctors, Biggest Loser personal trainers moonlight as nutritionists. They're often heard parroting "calories in calories out" and insist that all candidates simply count calories. It's wrong - mostly. When you don't know how to pick the right calories, counting calories is as senseless as drinking wine to suck down the over-hyped resveratrol to extend longevity, or eating Oatmeal Cream Pies "in moderation." Not all calories are created equal. Some get stored as fat regardless of physical activity and caloric intake. These include the low fat foods pushed on "biggest losers" like "fat free Jell-O" and lots more - even fruit. The more of these low/wrong calorie foods they eat, the more their brain screams more, more, more and their brain yells eat, eat, eat. Count these calories, and your weight plummets, but comes back with a vengeance once you can no longer ignore the physiological voices (the same ones that have Oprah convinced that she has a "food addiction.") On the flip side of fat storing calories, another type gets used very efficiently to fuel bodily functions and are easily shed via your metabolism. This efficiency of the "right" calories stems from their "behavioral" differences in the "Kreb's cycle." Bad calories barely produce enough energy to optimize "hormonal intelligence" and thus get stored as junk. As highlighted in my book, Over-The-Counter Natural Cures, the right ones blaze through this cycle and optimize hormonal intelligence, allowing excess energy to get used and burned, not stored. Contestants need to count and eat this type of calorie if they are to lose weight for life. I have been researching my condition and symptoms and I think I might have adrenal fatigue.

- Weight gain and inability to lose it, especially around the waist.
- High frequency of getting the flu and other respiratory diseases that tends to resist treatments.

I need to know workouts, lifestyle, diet, supplementation, medical history and social history, but I can recommend that you check your cortisol and other hormones, by saliva or blood. There is a huge difference between exercising and training. Over the last 10 years working with thousands of satisfied clients I have come to the conclusion that most of the general public simply exercises. They go to the gym with a vague plan in mind, but no specific strategy. They break a sweat and feel tired afterwards leading them to believe they have been productive. Yes some simple exercise is better than nothing as it will burn some calories, however there so much more you can achieve with the right routine. "Training" is making use of a program that is designed to reach a specific result. The exercises, speed of reps, reps, rest periods and other factors are clearly defined and arranged in way not only to burn off calories, but also to stimulate muscles into growth or activating fat burning hormones. Years of polling and collecting data from both the general public and my clients leads me to the conclusion that those who are training with the right techniques will make progress 2.5 - 3 times faster than the general public who are merely going through the motions with exercise.
Training vs. Just Going Through the Motions
During your most recent phase of training did you have a plan that enabled you to improve work output each week? You must push the body to do more each week in some way to create a beneficial response. Many trainees have been falsely led to believe that doing more work is the only way to promote progress, but this often leads to over training. Improving the quality of work and performing work in less time that previous workouts are more efficient pathways to success.

The routine above makes use of short rest periods while providing the muscles inadequate rest by doing 3 movements for the same body fat in a row to support a big increase in fat burning hormones. Execute this plan and you will do more work in about 20 minutes than most people do in an entire hour. Pay close attention to form, tempo and the short rest periods while aiming to increase the loads each week. Even small increases add up over a course of 4 weeks and help tremendously with fat loss! Eating "Clean" is Not Enough

Bison Roast & Gravy
Ingredients:
- 1 Bison Roast ~ 2 lbs
- 1 cup broth (chicken, beef, vegi, or just water)
- 1 yellow or red onion
- 4 bay leaves
- Salt
- Black pepper
- White peppercorns
- Garlic powder
- Organic corn starch mixed with water
Directions:
- Slice onion into even rings. Place on bottom of crock pot. Place thawed roast on top of onion rings. Pour broth into pot. Add bay leaves to pot. Sprinkle roast with salt, black and white pepper and garlic powder, to taste. Cook on high for 2 hours, and then on low for at least 4 hours.
- When roast is done (falls apart with a fork), remove to serving plate. Remove the bay leaves and carefully blend the hot liquid in your Vitamix, including the onions.
- In a small saucepan over medium-low heat, add Tablespoon of cornstarch/water mixture. Cook and stir until combined.
- Repeat until desired gravy thickness is reached. Server over/under/with Roast and ANYTHING ELSE!

This is our way of saying thank you for purchasing in volume. This can be any combination of products totaling 40 pounds and does not have to be specific to any category. Each 40 pound interval will yield the discount. For example, 80 pounds of product will yield a $50 discount and a 120 pound purchase will yield a $75 discount.

U.S. Wellness requires a $75 minimum
purchase and a 7 pound minimum combined purchase of
beef,
lamb,
pork,
nutraceuticals,
gourmet rabbit,
grass-fed goat,
grass-fed bison,
raw cheese,
single piece poultry, and
butter.
The minimum is required since we have built the cost of shipping into the price of the product. You will only see a nominal handling at checkout.
The issue is the 20 pound bulk chicken and turkeys originate from
separate cold storage center where those products are produced. It is not
efficient to ship one package of beef as a stand alone item when the balance of
the order originates 400 miles away.
The shopping cart will keep track and remind you if you are under the 7 pound
limit for a combination of beef, lamb, pork, raw cheese, butter, goat, shrimp,
soap and single honey bottle purchases. A

cart if you are under the minimum price or pound requirements.
