On June 15 the USDA released the 2010 Dietary Guidelines.  We were very disappointed to see a lack of grass-fed meats and healthy animal fats in their recommendations.  While they did address the obesity epidemic and stress the importance of exercise, the diet recommendations failed to help improve the situation.  Read the Weston A. CoffeeCoffee and tea drinkers may not need to worry about indulging - high and moderate consumption of tea and moderate coffee consumption are linked with reduced heart disease, according to a study published in Arteriosclerosis, Thrombosis, and Vascular Biology: Journal of the American Heart Association.

Researchers in The Netherlands found:
  • Drinking more than six cups of tea per day was associated with a 36 percent lower risk of heart disease compared to those who drank less than one cup of tea per day.
  • Drinking three to six cups of tea per day was associated with a 45 percent reduced risk of death from heart disease, compared to consumption of less than one cup per day.
And for coffee they found:
  • Coffee drinkers with a modest intake, two to four cups per day, had a 20 percent lower risk of heart disease compared to those drinking less than two cups or more than four cups.
  • Although not considered significant, moderate coffee consumption slightly reduced the risk of heart disease death and deaths from all causes.
Researchers also found that neither coffee nor tea consumption affected stroke risk.

"While previous studies have shown that coffee and tea seem to reduce the risk of heart disease, evidence on stroke risk and the risk of death from heart disease was not conclusive," said Yvonne T. van der Schouw, Ph.D., study senior author and professor of chronic disease epidemiology, Julius Center for Health Sciences and Primary Care, University Medical Center Utrecht, The Netherlands. "Our results found the benefits of drinking coffee and tea occur without increasing risk of stroke or death from all causes.

Van der Schouw and colleagues used a questionnaire to evaluate coffee and tea consumption among 37,514 participants. They followed the participants for 13 years for occurrences of cardiovascular disease and death.

Study limitations included self-reported tea and coffee consumption, and the lack of specific information on the type of tea participants drank. However, black tea accounts for 78 percent of the total tea consumed in The Netherlands and green tea accounts for 4.6 percent. Coffee and tea drinkers have very different health behaviors, researchers note. Many coffee drinkers tend to also smoke and have a less healthy diet compared to tea drinkers.

Researchers suggest that the cardiovascular benefit of drinking tea may be explained by antioxidants. Flavonoids in tea are thought to contribute to reduced risk, but the underlying mechanism is still not known.

Revisiting Fats

"Fats" are in the news almost daily. We are confronted with labels like, "monosaturated, unsaturated, saturated, omega 3's, 6's, and 9's", "good fats", "bad fats", and more. It does get a little confusing, even to those of us in the know.

Because the right kinds of fats are so significant to our physical and mental health and our ability to fight diseases like heart disease and cancer, it's worth a discussion to determine how these different types of fat fit into our diets and overall health.  

As you know, in general I'm a big fan of fats, but they have to be the right kinds. What are the RIGHT kinds of fats? How do you classify some of the newer fat superstars such as coconut oil and krill oil? What about heating certain oils? Let's see...

First of all, fatty acids or fats are classified according to their type of saturation. All fats and oils, whether of vegetable or animal origin, are a combination of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated linoleic acid and linolenic acid. However,  fats are classified according the predominant type of fat they contain.

Monounsaturated fatty acids contain a double bond of two carbon atoms. Because of that, they lack two hydrogen atoms. The more double bonds a fatty acid boasts, the more liquid it is. So monounsaturated fats are usually liquid at room temperature, but become thicker or semi-solid when refrigerated.

Monounsaturated fats are fairly stable and can be used for cooking. These types of fats do not become rancid very easily. Oils from most nuts including peanuts, almonds, pecans, cashews, and avocados contain primarily monounsaturated fatty acids. These fats get the nod as "healthy fats".

Polyunsaturated fatty acids have two or more pairs of double bonds and so, four or more hydrogen atoms are missing from this configuration. The polyunsaturated fatty acids have kinks or turns at the position of the double bond and do not pack together easily. They are liquid, even when refrigerated.

The two polyunsaturated fatty acids found most frequently in our foods are double unsaturated linoleic acid, or omega 6 fatty acids, as most of us recognize, and triple unsaturated linolenic acid, or omega 3 fatty acids. Our bodies cannot make these fatty acids and so they are called "essential fatty acids." Essential fatty acids must come from our diet.

 B Vitamins Better Than Drugs

Today I want to talk to you about B vitamins. They are your best protection against heart attack and stroke and more powerful than any drug.

B vitamins are controversial, but they shouldn't be... a lot of what you hear about them comes from misleading reports sponsored by drug companies.

Big Pharma is working on drug versions of B vitamins, especially B6. They're hoping you'll "trust" their drug version over the kind you get from a multi-vitamin.

But really, why would you pay hundreds of dollars for a prescription form of B6 when you can get it at your local vitamin store for pennies?

B vitamins are water soluble, which means you'll find them in the meat of animal protein, instead of the fatty part. Some B vitamins are found in fruits and vegetables, but your best source is red meat. And for B12, red meat is your ONLY source.

About 25 years ago, I developed a phrase to help my fellow medical students remember the names for all the B vitamins. I still use this to teach nutrition today:

It contains the first letter of all the B vitamins in numerical order. (The missing numbers are compounds researchers thought were vitamins but turned out to be nonessential.) The more absurd the image, the more likely you'll remember it.

Millions of American's suffer from fatigue. Their energy levels are so low that they require a pot of coffee to crawl out of bed. When afternoon hits, caffeine rich energy drinks flow freely to keep up at work. By evening, exhaustion sets in and it's straight to bed - only to repeat the lethargic process tomorrow. This isn't how the body was meant to operate.

Massive amounts of energy can be had without the above "fatigue masking" substances. Once possessed, anything is possible. Your energy will be the fuel behind your life's most important projects, thoughts, creativity and relationships. It's what the best athletes and entrepreneurs in the world are made of. And to get it, you have to adhere to three energy building requirements.

First, replace carbohydrate consumption with healthy fats three times per day. I'm not talking about heart disease causing trans fats and vegetable oils. I'm talking about Mother Nature's energy boosting fats like whole eggs, grass fed beef, coconut oil, seeds, nuts and avocados, just to name a few. Unlike carbohydrates, consuming healthy fat does not cause a spike in the fatigue causing, fat storing hormone insulin. But even better, it exponentially increases the production of a molecule known as ATP. ATP is the master energy and strength producing molecule within the body. The more you have, the better you perform.

A single fat molecule can produce a whopping 129 molecules of ATP. In contrast, if you are not consuming enough healthy fat the body is forced to utilize an inferior source of ATP production - carbohydrates. A single carbohydrate molecule produces a paltry 38 molecules of ATP! Do the math - fat yields more than three times the energy as a carbohydrate!

Second, begin supplementing with 0.5 to 3.0 grams of acetyl-L-carnitine (ACLAR) daily. This essential molecule acts as a chaperone to fat. It works by carrying it to our energy furnace - the mitochondria. Without ALCAR, fat remains stored - usually in the belly - and you grow tired.

The Archives of Gerontology and Geriatrics recently highlighted the effectiveness of ALCAR among the elderly. They showed that ALCAR was successful at boosting both mental and physical energy. About 100 participants over the age of 70 showed drastic increases in mental capacity and exercise duration as a result of ALCAR.

Dear Dr. Serrano,

I live in North Palm Beach, FL.  I am a young mom of two preteens and have a die-hard, meat-eating husband. We are in a whirlwind of disagreement since I just spent a week in a "raw food" health institute in West Palm Beach where I learned the "detriments" of meat eating which leads to degeneration, as they taught. We ate vegan raw food the entire time there, and my friend dropped 50 points in her cholesterol in 3 weeks. She also became somewhat anemic.  I personally had no adverse effects, and lost 5 lbs in one week. I weigh 110 and am 5'6", so that was a lot for me.

In light of learning of all the recommendations leading to avoiding read meat for consumption, as well as ethical reasons, I started to eat vegetarian when I came home from the stay. I viewed one too many PETA videos of factory farming and abuse and my stomach turned.

So, I have been eating vegan these past two months, with no problems, and my family is very upset. They don't want to join me. This has gone on for two months now. I found U.S. Wellness Meats and read about the farm, grass-fed beef, etc, and now am awaiting an order of meat from John, who spoke with me recently. I'm grateful he has healthier food than conventional beef! (I sent the info out to all my meat eating friends.) I figured that if my beautiful family insists upon eating meat, I will at least get them healthy meat. But I still feel as though I am buying them clogged arteries and high cholesterol. Can you tell me how this may be wrong?  Can proper omegas and CLA's be gotten from Fish Oil?

Where in all this does cholesterol and heart disease come in?  Why does the book "The China Study" have such great implication and strong, researched argument against meat eating if it is really safe?  Who is right?  What gives?

I would like to know the truth and eat what is healthy! I truly appreciate your help! Thanks for your time!

Dear Lisa,

I am very familiar with the Raw Institute, even though I have not been there myself.  I will try to answer your questions without letting you know I dislike the vegan diet.

Your friend losing 50 points of cholesterol doesn't mean a thing.  Cholesterol is the most important antioxidant in the body but it is a great selling point for the pharmaceutical industry.  Cholesterol is the mother of 90% of your hormones and also it is in every cell in your body.  Do you know that your body makes 60% of your cholesterol?  Did you know that your brain, if you pull the water off, is almost all fat?
Did you know that if your cholesterol is less than 155 after 55 or 60 the chances of dying of cancer or suicide increases by 3000%?

Cholesterol lowering doesn't mean a thing unless you have extreme numbers and that is your body telling you something is going on.  Did you know that if your cholesterol is high, it may mean that your hormones are low, and because it has to produce more hormones it has to dump more cholesterol into the blood so it can make the hormones necessary to be alive?  Did you know that normal cholesterol levels 10 years ago were 250 and now the doctors want to lower that number to 150?

If the body was really made to only eat vegetables, which I can tell you it is not, then we wouldn't make a hormone or an enzyme called elastin.  Only carnivores produce this enzyme hormone, and guess what, humans do.  Now if you go back to prehistoric era, you have never seen a man building a garden, but there is plenty of evidence they used to kill or cut so they could eat.  The reason they needed meat and skin was to protect themselves from the elements and other animals.  Agriculture didn't exist until the Egyptians took over the world.  They could feed people in one place due to agriculture, but before that time we were mostly nomads, meaning we  moved with the food and the seasons.  Yes, we ate vegetables, fruits and nuts, but we never stopped hunting to grow vegetables.  The best way to really follow vegetarians, is by following a culture that is pure vegetarian, and we still haven't found one, and the closest one is the people from India and they are not pure vegans.

Your body requires B12, vitamin D and other natural sources of necessary or essential nutrients that are provided by meat or fish, and sorry, but vegetables will not give you any of those nutrients.  Also, where are you going to get the fat that you require to be alive?  I would like to know how much energy, and sex drive you have in 6 months, please let us know.

The problem is the quality of the meat, and not the meat itself.  If I give poison to my meat, what do you think you are eating?  If you find a dead animal that was poisoned with a lethal dose and you eat it, you are going to get sick, this of course is an extreme but that is what we are doing with our children when we eat the commercially grown meats and non-organic vegetables. Also, where are your vegetables coming from?  Are they from a hydro farm, are they fresh, who picked the vegetables, what type of soil was used?  Did they use artificial fertilizers, and who touched them before you ate them?

We have to eat fish, meat or eggs so we can survive, if not you will get sick, trust me.

Fat Loss vs. Weight Loss

One of the first questions I get during email or phone inquiries is how many pounds can I lose?  This depends on many factors, but I quickly change the focus to loss of body fat vs. weight.  A body fat percentage test done by calipers with a skilled practitioner will reveal an exact starting point so that progress can be measured 4-6 weeks later.  Ideally during the early stages of a fat loss effort, lean muscle tissue will be gained at the same time as body fat is lost.  This represents a great change in body composition and appearance, however some people obsess over the scale instead of visible progress.  I assure you that there will not be a cash prize for reaching a certain body weight nor will anyone else at the pool or beach care what you weigh!  All eyes will be fixed on your appearance during social events which is what matters most. 

Let's take an example from one my client cases- a 42 year old woman we will call "Sally" reported her disappointment with only a 10 lb. weight loss in the first 60 days of her program yet her body fat test revealed a 16 lb. loss of body fat during 60 days and an increase of 6 lbs. of lean muscle during this time.  A dramatic change in body composition was also visible with before and after pictures. Sally confirmed that her appearance had improved and her favorite smaller size clothes were now fitting very nicely.  Her exercise performance and energy levels had also improved, yet she was initially fixated only going from 150 to 130 lbs in 60 days.  After receiving multiple complements from co workers and family members Sally realized that the "weight loss" was an irrelevant factor and has since focused on how she looks and feels which are far more important.

Fat Burning Impact of Muscle and Preventing Rebounds!

Every pound of muscle burns calories 24x7!  Any fat loss approach must aim to maintain or increase lean muscle tissue to elevate metabolic rate.  Women especially must embrace the fact that adding some muscle is crucial for supporting rapid fat loss and keeping it off for good.  I know what is coming across the minds of many women reading this article- will I end up looking like a female body builder?  No, not unless you plan to train, eat and take a boat load of performance enhancing drugs to achieve that type of physique, it does not happen by accident.  Faulty fat loss plans causing significant losses of muscle will result in rapid body fat rebounds, often times making the person end up with more body fat than when they started two to three months after the beginning of their poorly designed plan.

Metabolic Weight Training

For ten years I have built fat melting weight training routines for clients based on their specific needs.  Using high density routines with short rest periods, controlled tempos and movement combinations will activate a fat burning wild fire that will last for days on end making every waking moment productive for fat loss.  Beginners may start with body weight movements and more advanced clients can use a combination of weight training movements.  Identifying what will work for a client based on the specific conditions is the key to success.  Quick and to the point- metabolic weight training is a crucial part of the success equation.  Without the correct resistance training approach less than 5% of the population can reach their fat loss goals based on my research.

The 10 Minute Interval Training Routine

Interval sprint routines performed in many venues such as swimming, running, biking, stationary bike, elliptical etc are a highly efficient path to fat loss.  Far superior to steady state cardio, intervals have proven to be a highly effective fat loss tool for my clients requiring little time and in most situations no equipment. Crunched for time?  You can find ten minutes several times per week if you are serious about reaching any goals.  Female clients especially experience dramatic fat loss progress when executing interval programs due to the powerful hormonal and metabolic response.  In comparison, excessive steady state cardio can stimulate fat storage by triggering an unwanted starvation hormonal cascade.  A highly conditioned client may do 4-5 quick interval sessions in a week to peak fat burning during the summer.  Interval routines can take on great complexity by manipulating incline, tension, sprint timing and more.  Just like any other venue of exercise the challenge must become progressively more difficult to maximize fat burning.  Email scott@infinityfitness.com for your complimentary copy of the 10 minute fat burning interval workout today!

Ribeye Steaks with Fresh Tomato Tapenade

RibeyesIngredients:
Fresh Tomato Tapenade:
  • 1 cup cherry or grape tomatoes, cut in half
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • 1/4 cup chopped fresh basil
  • 3 tablespoons shredded Parmesan cheese
Directions:
  1. Press pepper evenly onto beef steaks.
  2. Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 11 to 14 minutes for medium rare to medium doneness, turning occasionally.
  3. Meanwhile combine Fresh Tomato Tapenade ingredients in small bowl.
  4. Season steaks with salt, as desired. Top each steak evenly with Fresh Tomato Tapenade.

Do not forget to take advantage of the 40 pound $25 discount by ordering 40 pound combinations of beef, lamb, pork, butter, goat, shrimp, bison, condiments, honey, rabbit, single item chicken selections, snack foods, pet food, and raw cheese.

This is our way of saying thank you for purchasing in volume. This can be any combination of products totaling 40 pounds and does not have to be specific to any category. Each 40 pound interval will yield the discount. For example, 80 pounds of product will yield a $50 discount and a 120 pound purchase will yield a $75 discount.


Minimum Purchase Rules

U.S. Wellness requires a $75 minimum purchase and a 7 pound minimum combined purchase of beef, lamb, pork, gourmet rabbitbison, raw cheese, organic butter,poultry, seafood and snacks.

The weight minimum is to help ensure everything stays frozen during transit and the price minimum is required since we have built the cost of shipping into the price of the product.  You will only see a $7.50 handling fee at checkout.

The 20 pound bulk chicken and turkey orders ship from a separate cold storage center, so they are not included in the 7 lb weight minimum. 

The shopping cart will keep track and remind you if you are under the 7 pound limit for a combination of beef, lamb, pork, raw cheese, butter, goat, shrimp, soap and single honey bottle purchases. A Red font will appear under the shopping cart if you are under the minimum price or pound requirements.
