How to Cook the World's Healthiest Meat

The fact that you're reading this newsletter shows that you are conscious about choosing the healthiest possible meats for your family. You favor grass-fed beef, pastured pork and poultry products because you know that these foods are loaded with nutrients, free from pesticides, antibiotics and growth hormones, and that the animals were ethically raised in a clean, natural environment.
Selecting the highest quality meats is vital to your health. But you must also consider how your meats are prepared. In fact, some cooking methods can turn even the healthiest, high quality protein source into a potential carcinogen.
When muscle meats - beef, pork, poultry and fish - are exposed to high very temperatures, dangerous cancer-promoting compounds called heterocyclic amines (HCAs) can form. Specifically, HCAs are the byproducts which are formed when amino acids (the building blocks of proteins) react with creatine (a chemical found in muscles) at high temperature.
Recent research shows HCAs increase the risk for several types of cancer including those of the stomach, colon, prostate, breast and pancreas.
A National Cancer Institute study assessed the diets and cooking habits of 176 people diagnosed with stomach cancer and 503 people without cancer. The researchers found that those who ate their beef medium-well or well-done had more than three times the risk of stomach cancer than those who ate their beef rare or medium-rare.
Another study performed at the University of Hawaii showed a nearly nine-fold increase in colon cancer among people who preferred their meats well-done.

Five Top Detox Foods

Detox diets have become synonymous with rapid weight loss. But what many people lose sight of is the fact that a high quality detox is equally effective for removing harmful toxins from the body and allowing it to heal itself, promoting long-term health and wellness. As we enter the fall season, there are many locally available fruits and vegetables that can be beneficial to an effective detoxification program. The following are nutrient rich, delicious food that you can easily incorporate into your daily meal plan.
- Beet Root - Beets are high in the nutrient Betalin, which has been found to be beneficial for improving liver detoxification. It is also rich in the nutrient lutein, which is important for eye health. Beets are great roasted and both the beets and their greens can be eaten in a mixed green salad. Look for beets with the greens still intact. Or, prepare beet greens by sauteing with olive oil and garlic, which is fantastic for improving digestion.
- Dandelion Greens - I grew up thinking that dandelions were synonymous with weeds and ugly lawns. Yet it turns out that dandelions are delicious to eat as a salad green, and they offer many health benefits. Dandelion can be bitter, but don't let that dissuade you from enjoying it. It is very high in vitamins and minerals, including potassium and magnesium, which are good for lowing blood pressure. They also can improve gall bladder function which can lower undesirable cholesterol levels, and work as a mild diuretic.
- Broccoli Sprouts - The most nutritious version of broccoli is its baby brother, broccoli sprouts. Sprouts in general are the very earliest shoots that erupt from a seed and are generally ten times as nutritious as the full-grown plant. The nutrient sulphoraphane highly concentrated in broccoli sprouts and is responsible for improving the liver's ability to detoxify bad estrogens from in the body, as well as other toxins found in plastics and pesticides that we get exposed to from our environment. Broccoli sprouts are a delicious addition to a mixed green salad and best served cold.
- Garlic - Garlic is known for its anti-viral and anti-bacterial properties. It is also a very good liver detoxifier, owing to its high content of sulfur. The strong sulfur odor is derived from the nutrient allicin, which is activated during chopping and crushing. To enhance the nutrient benefit of garlic, allow it to sit for about 10 minutes after crushing before eating. This allows the enzymes in the garlic to fully activate the allicin. When cooking garlic, sauté it for only 5-10 minutes: heating it for longer periods of time can inactivate its beneficial assets.
- Apples - There may be some truth to the adage, "An apple a day keeps the doctor away." The soluble fiber pectin is found in high concentrations in apple skin. Soluble fibers are good for removing cholesterol and ridding the body of heavy metals. Eating apples may also decrease your risk of heart disease and age-related memory changes. Whether you are cooking them or enjoying them raw, always choose organic apples because they are not sprayed with pesticides: apples are some of the most toxic fruits because of their ability to retain these harmful chemicals.

Dear Mandi,
To create a nutritional program without any history is asking for trouble. Yes, you can correct hypothyroidism through diet but it depends on what type.
Was the hypothyroidism secondary to removal of the thyroid?
Is the hypothyroidism secondary to immune disease?
Is it secondary to drug abuse, malnutrition, or genetics or even worse toxic buildout?
It depends on what caused the condition. If your problem was due to immune conditions, the first step is to eliminate any food allergies and you do so by doing an Immuno lab test, and then getting a blood test at your doctors office, checking for immune levels and your TSH, Free T3, Free T4, and even rT3. If toxins are the cause then you check lead, mercury, etc. and then make the necessary changes.
I have been very successful in my office reversing hypothyroidism when it is caused by malnutrition, allergies, toxicity, immune problems with the right diet and supplementation. It might take six to eight months but it can be done.
The paleo diet is a good start if you don't have any allergies with the foods consumed in the paleo diet, but again get the test first and then start your program with the necessary information so you can make the right decisions.

Do Not Give Away 9 Months of Progress During the Last 3 Months of the Year!

I am concerned that the last three months of the year are going to be a fat gaining/muscle wasting disaster for me like previous years. Every year despite good intentions things go south for me in October and get much worse in November/December with the holidays. I feel like I have thrown away nine months of work in three months of poor decisions. What do you suggest to prevent this backslide during the 4th quarter of the year?

Your analysis is right on and you are not alone. A very high percentage of people pack on body fat and lose muscle during the last three months of the year because they do not have a proper strategy in place. It is very easy to stop training with weather training as mood suffers along with outdoor training venues. While the holidays do provide some bad food choice temptations those are only a few days out of the entire quarter where you can run wild. The problems come in when people make excuses to eat poorly for extended periods of time and put off an attempt at success until the New Year.
You must schedule time to exercise, at a minimum three times per week for 30 minutes of intense exercise. Anyone can find the time to do this- just cut back the TV. The improved energy levels from training will result in much higher productivity levels saving you time elsewhere. You can go crazy and eat what you want on Thanksgiving, Christmas and New Years day without doing any damage if you play your cards right with exercise and some other strategies I list in the Preventing Body Fat Accumulation Cheat Meal File that you can get by emailing scott@infinityfitness.com. Do not let the surrounding days of the holidays turn into a self destructive free for all just because friends and family engage in those poor behaviors. You do not want to look yourself in the mirror on January 2nd and ask yourself why you piled on body fat to only have to tackle the problem at the New Year. This vicious cycle ensures that no progress is made year to year for many people. Do not be a statistic! Take corrective action!

Dear U.S. Wellness, We recenty drove cross country for several weeks and of course had some difficult times finding something healthy to eat. We brought muesli, nuts, raisins and apples.
We don't eat that much since we are over 75-years-old, but we discovered when we ate your beef jerky we we able to drive forever since it gave us so much energy and it so delicious. So we'll order some more for our next adventure.

Marinated Grilled Shrimp
Ingredients:- 3 cloves garlic, minced
- 1/3 cup olive oil
- 1/4 cup tomato sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 lbs shrimp, peeled & deveined
- skewers
Directions:

In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper.

Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.

Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.

Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
