Colder weather has returned to Northeast Missouri this week, after record highs during mid-January. We are enjoying sunny skies and cool temperatures, which is pretty typical this time of year. Our cattle in southern Alabama are still enjoying warm weather and green pastures as seen in our farm photos below.
With the flu reaching epidemic proportions all over the country, now is a great time to focus on diet to help prevent cold and flu this season. Adding more nutrient-dense foods to your diet isn't a cure-all, but certainly does not hurt. Dear Health-Conscious Reader, Today I want to show you something important from the slideshow I presented to guests at my State of the Art Anti-Aging Seminar recently... But I want to go a bit deeper for you than I did in my lecture because it could save your heart. In fact, in a minute I'm going to give you two powerful ways to offset the danger I'm about to warn you of... This image from my presentation will show you what I found. It's what I've long suspected. Your heart is particularly sensitive to telomere shortening. And short telomeres could lead to a heart attack. Here's the slide I put on screen for the seminar attendees -> The blue line represents the average telomere length (T/S ratio, measured in kilobases) of people who didn't have a heart attack (M/I). The red line shows the much shorter telomere length of the people who did. For this study, researchers looked at almost 15,000 initially healthy men and followed them for about 4 years. Then they looked at the telomeres of 337 people who had a heart attack (myocardial infarction, or MI) and compared them with 337 matched people who did not. As you can see in the slide, the average telomere length of those who had a heart attack was significantly shorter than that of the people who had no heart incidents.(1) Overall, for those who have shorter telomeres, the risk of heart attack went up by 62%... Could the Water You Drink Cause Allergies to Food?

The concept of an "allergic reaction" has been studied in the medical literature for more than a century. For many decades, certain physicians have been trained specifically to manage and treat people with allergies. This medical condition is nothing new.
But what is a new and modern phenomenon are the massive numbers of people who are now suffering from food and environmental allergies. In fact, the United States (and many other parts of the world) is experiencing what can only be described as an "allergy epidemic."
You almost certainly know someone who has debilitating (and potentially deadly) reactions to substances that are completely harmless to most people. Perhaps you suffer these effects yourself. And the numbers of allergy sufferers is growing.
According to a 2008 study by the Centers for Disease Control, reports of food allergies rose nearly 20 percent from 1997 to 2007. During the same time, the number of peanut allergies doubled and the number of hospitalizations related to food allergies increased 265 percent.
Currently, one out of every 17 children has some form of food allergy. And according to a new study published in the Journal of Allergy and Clinical Immunology the annual costs associated with food allergies is over $500 million.
The problem is that most doctors don't seem to know what is happening... or why....

Supplements and Cow's Milk Play Biggest Roles in Determining Vitamin D Levels in Children
Taking a vitamin D supplement and drinking cow's milk are the two most important factors that determine how much vitamin D is in a child's body, new research has found. Those factors play a bigger role than even skin colour and exposure to the sun, according to Dr. Jonathon Maguire, a researcher and pediatrician at St. Michael's Hospital. "Early childhood is a critical stage in human development, so achieving and maintaining optimal vitamin D levels in early childhood may be important to health outcomes in later childhood and adulthood," Dr. Maguire said. His research was published January 14 in the Archives of Pediatrics and Adolescent Medicine. Vitamin D deficiency is a risk factor for a number of illnesses, including asthma and allergies in children. Severe deficiency can cause rickets, a softening of bones. Yet dietary records of Canadian infants show that at 12 months they are receiving only 11 per cent of their recommended daily allowance of vitamin D through food such as oily fish, fortified dairy products and cereals. The rest needs to be obtained through other means, such as supplements or when the skin is exposed to the sun's ultraviolet rays. Lighter skin produces more vitamin D than darker skin colors. Dr. Maguire studied vitamin D blood tests of 1,896 health children under 6 years of age. The children were part of TARGet Kids! (The Applied Research Group for Kids!), a unique collaboration between children's doctors and researchers from St. Michael's Hospital and The Hospital for Sick Children. The program follows children from birth with the aim of preventing common nutrition problems in the early years and understanding their impact on health and disease later in life. Researchers found the two factors most strongly associated with higher vitamin D stores in children under 6 years of age were taking a daily vitamin D supplement and drinking two cups of cows milk a day . Both of those factors were better at predicting a child's vitamin D stores than skin color or measures of exposure to the sun. "When it comes to maintaining sufficient vitamin D stores in young children, the story is about dietary intake of vitamin D through vitamin D supplementation and cow's milk," said Dr. Maguire who was surprised to find that 57 per cent of the children were taking a regular vitamin D supplement. He said this could be a result of parents hearing evidence about the benefits of such supplements through the media. Research published by Dr. Maguire in the journal Pediatrics in December found that drinking two cups of cow's milk per day was enough to maintain adequate vitamin D levels in most children. Drinking more cow's milk could deplete iron stores in children's bodies. The study published January 14 was funded by the Canadian Institutes of Health Research and the St. Michael's Foundation.

Hi All! I just wanted to let you know how relieved and how thankful I am for your wonderful sugar-free, nitrate/nitrite-free, msg-free products. I have Crohn's disease and for a number of years food was really my enemy. I had honestly gotten to the point where I was basically living off of chicken and rice, and even that was causing me problems. Then one day by the grace of God, or some wonderful angels, I ran across a blog on Costa Rica, and the woman writing the blog talked about her experience with Paleo. As I began my research I learned how grass fed and air chilled meats made such a huge difference in the way the body can digest meat and how important healthy protein is for the gut. I had always tried to stear away from process foods, but had not realized that even maple sugar was suspect for me. Anyway, I was so physically sick at this point, only 2 months ago, that I figured I really had nothing left to lose. And everything I was reading made perfect sense to me. So I jumped in with both feet and within a few short days I began to feel better The problem though, was that being located on a tiny island at the end of the US, in Key West, FL, finding a variety of healthy meats without sugar or nitrates, etc, is next to impossible! Until one day I was reading again and stumbled across your ad on one of the Paleo websites. Again, being watched over by some higher power! I can not express to you how excited I was when I saw that there was actually such a thing as sugar-free bacon!!!!!!!!! And sausage and hot dogs too!!! And all nitrate, msg free!!! And limited seasonings with no night shade seasonings!! And ALL tasting FABULOUS!!!!! So wonderful to have bacon and eggs for breakfast without feeling miserable and sick for the remainder of the day or week. Up until now, I had always had to by-pass any bacon, even if they were nitrate/nitrite-free, because they always had maple sugar, which always made me sick. The same goes for the sausage. I have to tell you that life for me has really seen a positive change. I am feeling so much better. My stomach pain has subsided, as well as all of my other negative effects of Crohn's. I also now have energy again, and feel like I have added several years to my life-span. And it is such a wonderful feeling to actually be able to enjoy eating again, without suffering in the aftermath. Anyway, I just really wanted to let you all know just how much I truly appreciate the products you offer. And I hope you continue to bring in more sugar-free meats as well. I am really anxious to try the sugar-free ham. The last time I remember being able to eat ham was as a young child, and I am not even sure I felt okay after eating it then!!! Seared Scallops with Bacon Mustard Sauce
Ingredients:
Directions:
- Grill the bacon until crispy, cut into small pieces and set aside.
- Whisk together the olive oil and stock over a low heat. Bring to a boil and let it simmer until reduced by half.
- Turn down the heat and stir in the cream and mustard. Add the bacon bits. Keep the sauce warm while you deal with the scallops.
- Pat the scallops dry with a kitchen towel, season well.
- Melt the bacon fat or butter in a frying pan over a very high heat. Wait until the fat is smoking before adding your scallops. Sear them for a minute on each side until they turn golden. Remove from pan and drizzle with sauce.
