We've been busy here at US Wellness this week!  Some of our most popular products have restocked, including the beef bone broth, beef gelatin, oxtails, knuckle bones and pet burger.  We've got more things on the way this week so stay tuned to the website. 

Thank you for your patience as we continue to work through our big website update!  We moved over to a new website platform this week that brought many changes to both our storefront, and everything behind the scenes.  These changes will offer many conveniences to our customers, wholesalers and affiliates, as well as streamline the processing and shipment stages.  If you are having any issues accessing your account or logging in, please let us know.

Sitting can kill you.  Rather too much sitting, can kill you, even if you are exercising.  Results of a new study have been released explaining how we can be more susceptible to contracting various diseases if we are too sedentary, even if we exercise.  Much of our daily lives are now spent sitting behind a computer, or staring at a TV screen.  However more and more workplaces are offering their employees standing workstations, tread desks or more breaks throughout the day to try and break these trends.  We would love to hear your thoughts and feedback on how to be more active during the workday.  Feel free to share any ideas with us via email, Facebook or Twitter.

Only 2% Of My Cancer Patients Have Had This Checked

I saw a patient recently who has stage four breast cancer.

She'd been to some of the best hospitals and specialists for care. Before she came to me she'd had a mastectomy and chemotherapy. Then the cancer spread to her backbone and she had radiation treatment.

Yet still, after all that time and until she came to my clinic, no one had mentioned a possible estrogen problem. No one ever bothered to measure her estrogen. They never looked at whether her breast cancer was estrogen positive or progesterone positive.

The rates of most cancers have stabilized. Most cancers aren't a death sentence the way they used to be. But there are five cancers where the rates are still going up. They are breast cancer, endometrial cancer, cervical, ovarian and prostate cancer.

And the number one thing you have to do with these cancers is measure the estrogen in the blood. Unless you're doing that it's malpractice.

Most places test tissue samples for estrogen receptors. Except most of them do nothing with the results. Probably only 2% of the patients who come to me with those cancers have had their estrogen checked by an oncologist.

So I feel like now is the time to come out strongly and talk about where some of these cancers are coming from and how to prevent and take the fight to these cancers.

Why All-Nighters Don't Work: How Sleep, Memory Go Hand-in-Hand 
 

Want to ace that test tomorrow? Here's a tip: Put down the coffee and hit the sack.

Scientists have long known that sleep, memory and learning are deeply connected. Most animals, from flies to humans, have trouble remembering when sleep deprived, and studies have shown that sleep is critical in converting short-term into long-term memory, a process known as memory consolidation.

But just how that process works has remained a mystery.

The question is, does the mechanism that promotes sleep also consolidate memory, or do two distinct processes work together? In other words, is memory consolidated during sleep because the brain is quiet, allowing memory neurons to go to work, or are memory neurons actually putting us to sleep?

In a recent paper in the journal eLife, graduate students Paula Haynes and Bethany Christmann in the Griffith Lab make a case for the latter.

Haynes and Christmann focused their research on dorsal paired medial (DPM) neurons, well-known memory consolidators in Drosophila. They observed, for the first time, that when DPM neurons are activated, the flies slept more; when deactivated, the flies kept buzzing.

These memory consolidators inhibit wakefulness as they start converting short-term to long-term memory. All this takes place in a section of the Drosophila brain called the mushroom body, similar to the hippocampus, where our memories are stored. As it turns out, the parts of the mushroom body responsible for memory and learning also help keep the Drosophila awake.

"It's almost as if that section of the mushroom body were saying 'hey, stay awake and learn this,'" says Christmann. "Then, after a while, the DPM neurons start signaling to suppress that section, as if to say 'you're going to need sleep if you want to remember this later.'"

Understanding how sleep and memory are connected in a simple system, like Drosophila, can help scientists unravel the secrets of the human brain.

"Knowing that sleep and memory overlap in the fly brain can allow researchers to narrow their search in humans," Christmann says. "Eventually, it could help us figure out how sleep or memory is affected when things go wrong, as in the case of insomnia or memory disorders."

Dear Wellness Meats,

I just wanted to let you know how amazing your products are after enjoying my first order.  I have never had meats that tasted so fresh!  I wonder what have I been eating all these years from the supermarkets?  Whole Foods meats taste the same as any other supermarket but your meats are sooooo good! Instant Stew

 


Ingredients:
  • 3 lbs stew beef (or chuck roast or short ribs, see note below), cut into chunks
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp white rice flour (optional)
  • 2 tbsp ghee
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 3/4 cup red wine (Zinfandel, Merlot, Cabernet Sauvignon)
  • 3 cups beef broth
  • 3 carrots, peeled and cut into chunks
  • 3 parsnips, peeled and cut into chunks
  • 3 celery stalks, cut into chunks
  • 1.5 lbs waxy potatoes (red, golden, etc), cut into chunks
  • 3 sprigs fresh thyme (1/2 tsp dried okay)
  • salt and pepper to taste
  • 1 small handful parsley, chopped
Directions:
  1. Combine the beef, salt, pepper, and rice flour; toss to dust the beef evenly.
  2. Plug in your Instant Pot and press the "Saute" button. Add the ghee and warm until melted and shimmering, about 3 minutes. Add 1/3 of the beef and saute until browned, about 6 minutes, then remove the beef and add another 1/3 of the beef. Continue until the rest of the beef has cooked, about 20 minutes total; set the beef aside.
  3. Add the onion and sauté until softened, about 4 minutes, then add the garlic and tomato paste. Sauté until aromatic, about 30 seconds, then add the wine and broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot. Add the beef (and any accumulated juices), carrots, parsnips, celery, potatoes, and thyme.
  4. Cover and set the Instant Pot to "Meat/Stew" (high pressure) for 20 minutes. Once the Instant Pot finishes, wait until it depressurizes, about 15 minutes. You'll know it's ready when you can remove the lid easily.
  5. Gently remove the solid ingredients from the pot (the carrots and parsnips will be very tender) and set aside. Set the Instant Pot to "Saute" again and simmer the sauce until reduced by half, about 10 minutes. Taste and add salt or pepper if needed. Return the solid ingredients to the pot, stir in the chopped parsley, then serve.

Stovetop Directions: 

  • In step #2, set the stovetop to medium heat and use a dutch oven. In step #3, only add the beef and thyme. In step #4, cover and simmer on low until the beef is just tender, about 1.5 to 2 hours, then add the vegetables; simmer until the vegetables and meat are tender, another 20 minutes. Proceed to step #5 to finish the recipe.

    ** Stew beef is fairly lean and sourced from various beef cuts; 20 mins is a pretty standard pressure cooking time for most cuts. You can also use a cut with more connective tissue, like chuck or short ribs; be sure to adjust the pressure cooking time to 25 minutes to make sure it's tender. If you're using bone-in meat, throw the bones into the pot after cutting up the meat. Fish them out before serving, and re-use them to make broth as well.

    ** Instead of celery stalks, consider using celery root (cut into chunks). The texture is similar to potatoes and still imparts a celery flavor. Other root vegetables will work as well, like turnips and rutabaga.

    ** When making meat dishes, it's important not to force-depressurize the Instant Pot by turning its valve to "steam", as it can result in a mealy texture. Just give it time to depressurize on its own.
