Dear John,
It's here - the new super food, magic elixir, liquid gold, the new green juice and even the fountain of youth. The newest food 'trend' of 2015 is clearly bone broth. Here at US Wellness Meats we've known for years what a nutrient powerhouse bone broth is, and our customers, experts, chefs, doctors and nutritionists have helped us create several more types of this healthy elixir. We are happy to see that more consumers are realizing the benefits of adding a cup of bone broth to your daily routine. We are proud to offer three sizes of beef bone broth, and have recently expanded our offerings to include the thicker, richer version of beef broth, beef gelatin. In addition, just last year we added duck stock, chicken stock and chicken gelatin to the menu.
We would love to hear your thoughts on broth and gelatin! Feel free to share any recipes, questions, uses or wishes about these powerful foods on our Facebook, Twitter or Pinterest pages.
If you would rather make your own broth, we have all the ingredients you need! Marrow bones, knuckle bones, feet and backs are all popular broth ingredients, and meaty chicken backs are on sale this week only!
Expect to see big changes coming to our website soon! Here at US Wellness we have been working very diligently over the last several months on a big update to our entire webstore and operating system. This is going to offer many conveniences to the ordering and shipping process for all of our customers. While we are looking forward to the updates, we understand that as these changes take place there will likely be some website issues and delays. We have an excellent team working on this project to ensure that everything goes as smoothly as possible and we appreciate your patience through this change.
Healthy Regards,
John, Lee Ann, Tressa, Jennifer, Amanda & Laura on behalf of the farm families of US Wellness Meats.

Dr. Al Sears | "Sleep" Hormone Reawakens Your Youth Gene
By: Dr. Al Sears, MD You could be 80 years old and feel like a teenager. Or you could be in your 30's and feel like you have one foot in the grave. The secret to feeling young is how well your body "talks" to your telomeres. In doing research for my upcoming book on how to benefit from telomere biology, I've discovered an interesting fact. Telomeres have receptors that communicate with your hormones. They talk to each other. That's important because your hormones and your telomeres affect aging more than anything else. If they have "good" conversations you feel (and stay) young. If they have "bad" conversations you can age more quickly than your chronological age. Youthful hormone levels tell telomeres, "We're still young and strong! Continue to rebuild and revitalize these cells." The opposite happens when you have too little of a specific hormone. That signals the telomere that you're "old." Repair and maintenance work slows down. The cell takes on older, slower and less active behavior. One of the most remarkable examples of this is the way the "sleep" hormone melatonin affects aging and telomeres. Many studies show that melatonin's antioxidant power prevents telomeres from shortening.(1) But one group of researchers was looking into using melatonin for eye health. They found that melatonin protected the eyes by increasing telomerase, the enzyme that rebuilds telomeres.(2) Another study also looked at melatonin's role in activating telomerase. They divided 37 rats (both young and old) into two groups. For 21 days, one group received melatonin and the control group got nothing. They tested each group for telomerase activity. In both young and old rats, the ones given melatonin had significant increases in telomerase.(3) It's very simple... Curcumin's Ability to Fight Alzheimer's Studied
One of the most promising new treatments for Alzheimer's disease may already be in your kitchen. Curcumin, a natural product found in the spice turmeric, has been used by many Asian cultures for centuries, and a new study indicates a close chemical analog of curcumin has properties that may make it useful as a treatment for the brain disease. "Curcumin has demonstrated ability to enter the brain, bind and destroy the beta-amyloid plaques present in Alzheimer's with reduced toxicity," said Wellington Pham, Ph.D., assistant professor of Radiology and Radiological Sciences and Biomedical Engineering at Vanderbilt and senior author of the study, published recently in the Journal of Alzheimer's Disease. Accumulation and aggregation of protein fragments, known as beta-amyloid, drives the irreversible loss of neurons in Alzheimer's disease. Developing small molecules to reduce this accumulation or promote its demolition is crucial, but the ability of these small molecules to cross the blood-brain barrier has been a restricting factor for drug delivery into the brain. Pham and colleagues at Shiga University of Medical Science in Otsu, Japan, developed a new strategy to deliver a molecule similar to curcumin more effectively to the brain. "One of the difficulties in the treatment of Alzheimer's disease is how to deliver drugs across the blood brain barrier," he said. "Our body has designed this barrier to protect the brain from any toxic molecules that can cross into the brain and harm neurons. "But it is also a natural barrier for molecules designed for disease-modifying therapy," Pham said. To work around the problems of giving the drug intravenously, the researchers decided to develop an atomizer to generate a curcumin aerosol. The Japanese researchers developed a molecule similar to curcumin, FMeC1, which was the one actually used in this study. "The advantage of the FMeC1 is that it is a perfluoro compound, which can be tracked by the biodistribution in the brain noninvasively using magnetic resonance imaging. Curcumin is a very simple chemical structure, so it is not expensive to generate the analog," Pham said. "In this way the drug can be breathed in and delivered to the brain," he said, noting that nebulizers are out in the market already, and are relatively inexpensive. "In this paper we also showed that delivery to the cortex and hippocampal areas is more efficient using aerosolized curcumin than intravenous injection in a transgenic mouse model of Alzheimer's disease," Pham said. Aggressive Fat Loss Goals and Strategies to Burn 15 Pounds of Fat in 60 Days or Less
By: Scott Mendelson
Scott,
My husband has a big belly fat problem! I finally got him to agree to get on board with me with a fat loss program. I have body fat to lose all over. We want to look better for our vacation to Mexico in April. How do we set goals and make them happen? Roger's first idea is to do cardio seven days per week for an hour in the morning. Is that a good idea? Carol

Carol, Thanks for the information. I have helped numerous clients in the same situation as your husband lose body fat quickly while improving energy levels. The faster he earns progress, the higher is motivation levels will be to continue with the proper strategies to support long term success. I gather from our phone call that both of you have high stress levels which contributes to body fat storage in the lower body for women and the abdomen for men. This must be taken into account when designing a nutrition plan as you both are highly sensitive to carbohydrate intake. You Can't Reach Your Goals Without the Right Strategies! Please read the New Year Goal Setting blog post to set yourself up for great fat burning success during 2015. Setting goals is extremely important, but the strategies used to achieve the goals are of the greatest importance, especially when pursuing aggressive body fat loss. Shut Off Fat Storage ReceptorsRoger is a text book case of stress hormones gone wild, which support fat storage especially in the mid-section. Men have a high density of fat storage receptors around the gut and love handles, which are activated by elevated stress hormones such as cortisol. Excessive steady state cardio and low food intake drive cortisol levels even higher compounding the problem. Our clients do fantastically well slashing body fat with interval sprints done in a variety of formats and not a single minute of steady state cardio. You must set goals that are specific, measurable and time sensitive. After reviewing your pictures and history I would like you to consider the following... Continue Reading...

Tuna & Broccoli Patties with Lemon Caper Sauce
Ingredients for Lemon Caper Sauce:
- 1/2 cup mayonnaise
- 1 tablespoon capers, minced
- 1 tablespoon Dijon mustard
- 2 teaspoons fresh squeezed lemon juice
- 1/2 teaspoon dried parsley
- 1/4 teaspoon garlic powder
Ingredients for Tuna & Quinoa Patties:
- 1/2 cup uncooked quinoa
- 1 cup diced broccoli
- 1/2 cup minced onion
- 1 cup drained & flaked tuna or salmon (about a 7 ounce can)
- 1/2 cup blanched almond flour or gluten free bread crumbs
- 2 garlic cloves, minced
- 1/4 teaspoon dried dill
- Sea salt & fresh ground black pepper
- 2 eggs
- 1-3 tablespoons coconut oil, for frying
Directions:- To make the Lemon Caper Sauce - in a small mixing bowl, combine all of the ingredients and refrigerate in an air tight container until ready to serve.
- To make the Tuna & Broccoli Quinoa Patties - cook the quinoa according to package directions, or use The Better Way to Cook Quinoa method. Drain and cool.
- In a medium sized skillet, saute the broccoli and onions in 1-2 teaspoons of coconut oil over medium heat until they are beginning to turn soft, about 5 minutes. Remove from burner and cool.
- In a large mixing bowl, combine the quinoa, broccoli and onions, tuna, almond flour, garlic, and dill. Season with lots of sea salt and fresh ground black pepper to taste.
- Stir in the eggs.
- Warm a tablespoon of coconut oil in a 10-12 inch skillet (this is the one I recommend) over medium heat.
- Pack a 1/4 cup metal measuring cup with patty mixture and carefully ease the mixture out into the skillet. Use the back side of a spatula to press the mixture into a three inch patty, about 1/2-3/4 inch thick.
- Reduce temperature to medium low, and fry the patties for 3-5 minutes on each side, or until they are golden brown. Keep adding more coconut oil to the pan as needed. Serve warm or at room temperature with the Lemon Caper Sauce.
