This is one of my favorites from US Wellness, it's always in my shopping cart. I usually roast it with salt and herbs, at 350 for 35-40 min. It is very tender and delicious. My family loves it.

paleo sweet potato chicken soup
Paleo Sweet Potato Chicken Soup
Author: Caitlin Weeks 
Serves: 3-4

Ingredients:
  • 2 Tbsp of organic grass fed butter 
  • 2 cloves garlic diced
  • 2 stalks of celery
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 sweet potatoes, skinned and chopped into bite sized pieces
  • 3 cups chopped cabbage, white or red
  • 1 lb raw pastured organic chicken thighs, chopped (*leftover holiday turkey works great too, see note below)
  • 4 cups homemade chicken broth or stock  
  • 2 tsp paprika
  • 2 tsp thyme
  • 2 Tbsp fresh chopped parsley
  • sea salt to taste
  • pepper to taste 
Directions: 
  1. Put the celery, onion, carrots, and garlic in a pan with melted butter over medium heat and saute for 5 minutes.
  2. Add the raw chicken pieces and keep stirring.
  3. Season the chicken with salt, pepper, paprika, and thyme while cooking.
  4. When the onions are soft and chicken is browned, add the chicken broth, sweet potatoes, and cabbage.
  5. Simmer covered for 30 minutes on medium stirring every 10 minutes.
  6. If you like a creamier soup you can use an Cuisinart Immersion Hand Blender briefly before serving.
  7. Top with chopped fresh parsley before serving.  
Note: **If you want to use leftover turkey from Thanksgiving, omit chicken and add the turkey the same time as adding broth.

  • The South Carolina Chicken Bundles, BBQ Sauce, produce and cookbooks ship from separate locations, so they are not included in the 7 lb weight minimum.  The shopping cart will keep track and remind you if your order is under the 7 lb limit.
