"It's my belief that cooking is a craft. I think that you can push it into the realm of art, but it starts with craft. It starts with an understanding of materials. It starts with an understanding of where foods are grown.” ― Tom Colicchio, Chef Striving & Thriving Perhaps the biggest difference between factory farming and regenerative farming is in the soil. Adding herbicides, pesticides, and artificial fertilizers to soil is an effort to be more profitable, but it also causes a breakdown in the natural balance. In order for regenerative farming techniques to make sense for farm families, there must still be opportunity for profit. Yes, foods from these farms tend to cost a little bit more, but most people understand when something is well-made, more effort, time, and resources have gone into making it so. In recognizing the value of healthy soils, sustainable farming emphasizes quality and nutrition. It requires more attention to the land, grazing cycles, periods of rest, composting, cover crops, and lots and lots of sweat! When the conditions are in balance, nature has a way of regenerating, growing, and nourishing that cannot be accomplished artificially. Cattle play a vitally important roll in soil health. When they graze, they're trampling grasses underfoot and adding natural fertilizers to the soil. This is composting in action. They actually help create soil.
