Nose To Tail Nutrition Nose to tail eating was a common practice in past generations. Society was more agrarian and families were able to raise their own food. Small family farms were numerous. Since food was raised at home, people knew what they were eating and the food chain was localized. People were far more likely to know their farmer. Organ meats were a significant part of the diet as well as animal fats like tallow and lard. These nutrient dense foods were on the table regularly. Animals were more likely to be pasture raised and grass-fed. Today, the overuse of pesticides, herbicides, antibiotics, and soil erosion has depleted soils of vital nutrients making food less nutritious. Today's factory food culture leaves a lot to be desired and offers a lot of empty calories.
