Butter, Lard, and Tallow
We really should listen to our elders more. Our great-grandparents were taken to task for using animal fats like lard, tallow, and butter. It was a normal part of small family farm life. They used every part of the animal. Rural Americans commonly used these animal fats for cooking — until government health guidelines were introduced that questioned the effects on health. A whole generation was convinced that processed vegetable oils and margarine was a much healthier alternative.
