Prepping For St. Paddy's Day
St. Patrick's Day is fast approaching and with it the opportunity to try a taste of a traditional Irish American dish. Corned Beef has been a popular dish for ages. It is thought that salted beef was produced by the Irish in the Middle Ages. The dish became popular on this continent during the 1800's when numerous Irish made the journey to the United States. While beef was a luxury food in Ireland, it was more economical here in the states and fast became a traditional dish. It was also a popular meat used as field rations for soldiers during World War I and World War II.
"Corned" simply refers to the corn-size rock salt or possibly saltpeter (potassium nitrate) that was commonly used to cure the beef brisket. Most commercial corned beef will have a bright pink color when prepared. This is due to the nitrates and nitrites that are added to preserve the meat.
It's not necessary to add nitrates and nitrites to the brine. In fact, US Wellness avoids the use of these harsh additives. We use sea salt, garlic powder, nutmeg, coriander, citric acid, clove, cinnamon, and allspice in our brine. We think you'll love our all-natural corned beef, and if you need the bright pink color, add a little purple cabbage to the crock.
