Nutritional Value
Why is it important to know where your food comes from and how it is raised? It's essential for all the reasons you eat food - flavor, nutrition, energy, comfort. You'll check more of those boxes when you shop for organically raised produce and grass-fed, grass-finished, and pasture-raised meats. Fruits and veggies are always better when they are vine-ripened and fresh. Sometimes organic fruits and veggies have little imperfections or even marks where insects have nibbled. That's OK...it just means the little critters like it, too, and it can indicate that chemical pesticides haven't been used. We've somehow gotten the idea that flawless produce is better, but that is not always the case. It's more important to be fresh, ripe, and raised in good soil without pesticides or GMOs. Soil, sunshine, and rain are all contributors to quality. Unfortunately, much of the food grown in the U.S. is from depleted soils. It's estimated that nutritional content has declined immensely due to soil depletion since the 1970s. The body needs these vitamins and minerals to fight off sickness and disease and help us stay healthy. One study found that an orange in the 1950s had more nutritional value than seven oranges today. YIKES!
Meat is no different, and soil plays a critical role in its nutritional value. Cattle are ruminant animals. They have multi-chambered stomachs designed for processing grasses, not grains. When cattle eat what nature intended, they are healthier, more nutrient-dense food for us. Grass-fed, grass-finished beef is higher in healthy Omega-3 fats (EPA, ALA, DHA) and CLA. This cannot be overstated because Omega-3 fats and CLA are vital to numerous body functions, including cardiovascular, immune system, and neurological. By most estimates, grass-fed and grass-finished beef and dairy can be 300-500% richer in CLA than grain-fed animals. 100% grass-fed animals contain up to five times the amount of Omega-3 fats as their grain-fed cousins. Know your farmer...know your food. It really does make a difference for every reason we eat food.
