Colorful Fat
Fats come in a wide variety of types and uses. There are fats in the foods we eat. Some are not healthy, others are extremely good for us. For example, there are saturated fats, trans fats, monounsaturated fats, polyunsaturated fats. Each type does different things in the body. Fats in general have gotten a lot of bad press over the years. But, with more research comes a more thoughtful, balanced approach to food. Balance seems to be the ticket when it comes to most things. Nutrition is no different. Understanding the differences in fats can be confusing. Basically, stick with all-natural foods for healthier fats and better balances. Avoid artificial fats that come from vegetable oils, margarine, and other processed foods. The source of your food can make a big difference in nutrition. Grass-fed beef, pasture-raised meats and poultry, wild-caught seafood, and grass-fed dairy, for example have a much healthier ratio of Omega-3 to Omega-6 fatty acids. Grass-fed beef also has CLA (conjugated linoleic fatty acid). That's a good fat that has numerous health benefits.
In the body, there are color-coded fats. Dr. Sears discusses some of this in his article, "Beige Fat Beats Alzheimers". The main types have been identified as white, brown, and beige. The body maintains "white fat" as a future store of energy and thermal insulator. It is also responsible for some healthy hormone function. Too much "white fat" though can be hard on organs. This is the visceral fat found around the belly and major organs. "Brown fat" helps keep babies warm and turns "white" fat into healthier fats in adults. "Beige fat" is somewhere in between and is thought to help burn fats and act as an anti-inflammatory. So when you think of fats, consider that there are good and bad, but if you stick with all-natural foods and a balanced diet you're doing pretty well. Kelley Herring discusses this at more length in her latest article, "Reject the Alternative Facts: Eat More Meat To Live Longer & Healthier".

Product Feature | What Is Offal?
Offal can be everything from liver, to bone marrow, to tripe, to heart, and it’s not animal-specific. You can attach offal to the animal you’re referring to, like beef offal or pork offal. Offal has a rich culinary history, dating back to our time as prized meats in hunter-gatherer societies. While America has been reluctant to adopt offal to the same effect as some other countries, there are still a variety of dishes that utilize offal in America, and each year it seems to increase in popularity.
