Happy Easter...We hope you're able to gather together with family today for warm fellowship and great food. Whether the main dish is Ham or Lamb, Beef or Chicken, spring holiday gatherings are sure to have plenty of food. Springtime evokes childhood memories of family gatherings and reunions. Grandma cooking in the kitchen and savory aromas wafting throughout the house, beckoning us to the table where we would snatch little nibbles before it was time to eat. Prayers of thanksgiving. Plates piled high with so many wonderful meats, potatoes, creamy veggies, fruity side dishes and deserts. There was usually a table full of pies, cobblers, and cakes. For families who love good food, good cooks are a necessity. This may be a chicken and egg issue. Which came first the good food or the big appetites?
Many years ago it was common for families to use animal fats for cooking. A tub of lard or tallow was kept for baking or frying. Butter was honest to goodness real butter from cream skimmed off milk from dairy cows. Unfortunately, a lot of money was spent convincing Americans that animal fats and real dairy were not healthy. Those efforts worked for quite awhile, but Americans are rediscovering what Grandma and Grandpa knew was good - real butter and tallow from grass-fed cows is so much better than ultra-processed cooking oils. Maybe it's time to take your cooking to an all new level of delicious!
