Ancestral Wisdom

When we talk about "Nose to Tail" eating, we're discussing a topic that was a normal way of life for our ancestors. They didn't waste much because they couldn't afford to. Early ancestors weren't always sure when their next meal might be and every ounce of nutrition they could squeeze out of a hunt meant a higher likelihood of survival. Did you know that the earliest known food preservation methods were employed as early as 12,000 BC. Curing with salt, smoking, fermentation, and drying foods were early forms of preservation. As summer waned and temperatures began to cool, our ancestors would begin preserving meats, fruits and veggies as they were able to hunt and gather extra. This in preparation for winter months when food became scarce in colder areas. Later generations would use refrigeration as we've become accustomed to. Early refrigeration was as simple as using a hole in the ground, cold stream, or snow. Today, Amish families without electricity will often use "Ice Houses" that are well insulated small buildings with ice cut from frozen ponds and rivers. You might be surprised to learn many of these still have ice from last winter.
