Summer means something different for everyone. It can mean family vacations, roadtrips, camps for the kiddos, summer sports, fishing, water fun, fireworks, outdoor gatherings, or any number of warm weather activities. The great outdoors is pretty great here in the U.S. of A. Between the east and west coasts, north and south, we have plenty of opportunities to explore. There are mountains, beaches, hills and valleys, forests, deserts, rivers, lakes, oceans, and everything in between.
Perhaps the most traditional outdoor summer activity though is grilling. With Father's Day coming up June 18, Dads everywhere will be prepping the grill for a big day of food, fun, and fellowship. People who love to grill outdoors have their favorite methods, seasonings, styles of grill, and cuts of meat. The gas grill is a relatively modern appliance that allows for a quick fire, reliable temperatures, and no-fuss grilling. Burgers, steaks, and chops all do well on a gas grill. Some traditionalists prefer charcoal or pellet grills. There is a difference in flavor with meats having a smokier profile, but there can be some challenges. Starting the grill takes more effort and patience. Temperature is something that has to be watched closely. Smoking is also a traditional style of outdoor cooking and can require even more effort. Hardwood charcoal, meat rubs, meat thermometers, grilling gloves, hardwood chunks, and various tools for managing the process. Smoking meats can be a real treat if you like the smoky flavors. Smoking requires minding the temperature closely and making small alterations in the venting. This method is suited for larger cuts or whole primals, but chicken, steaks, burgers, brats, and franks do well on the smoker too. Plan on the process from start to finish taking considerably longer no matter what you're cooking. This means more planning, more prep, and more time dedicated to the craft. This is outdoor slow cooking at its finest. Patience is a necessity, but the payoff that awaits is nothing short of gourmet.
